Today, we are going on to discover a fantastic bakery in the south of France, managed by a young couple, Kévin & Laurine. I featured Laurine in a previous video, a very hard-working woman baker who works non-stop all day and bakes by herself more than 300 breads per day!
We will check out Kévin's work with is focused on famous French pastries, cakes & tarts. He works alone non-stop from 4am until the closing time at 8pm.
He makes a wide range of delicious 'pâtisseries'. Everyday, he makes more than 10 types of French cakes & tarts, all made from scratch by hand, ranging from the emblematic 'éclair', raspberry & strawberry tart, 'tarte citron meringuée' to 'mille-feuille' and 'baba au rhum'.
Located in 'Cavignac', a small village in the southwest of France, this 'boulangerie-pâtisserie' is managed by a young couple in their late 20s. Kévin is the master 'pâtissier' chef who makes pastries and cakes, while Laurine is the master bread baker. When the previous owner retired, they took over the bakery in early 2022, but Laurine is an experienced baker with more than 12 years of experience. Every day, she prepares and bakes more than 300 breads by herself!
In a small village where the competition is high, they quickly became one of the favorite bakeries among the locals. So much so, that they were featured in the famous TV show 'La Meilleure Boulangerie de France' on the national TV channel M6, in which they won the competition of that episode!
In this video, we will see how these 'patisseries' are made. The amount of work that it takes to make all these different types of desserts is unbelievable as many different creams & puff pastries & biscuits are used.
French bakeries should be celebrated for their hard work and how delicious the desserts are for such an affordable price!

Our local bakery in a small super market makes all sorts of fancy looking pastry, but they all taste pretty blah sugary. After a prolonged trip to Europe, including France, I realized how terrific pastry can taste, especially combined with a fine coffee.

Enjoyed this video … the work that goes into making your pastries is incredible! I’m wondering if some of your product gets burnt ( appears very dark on some items ) what do you do with these ?

Am I the only one that sees this fly? Or that he doesn't have on any gloves in a professional setting. I'm a chef and I can appreciate the pastries he's made but the sanitary part of me can't get the gloves and fly. Otherwise beautiful work.

Hello, They wash their hands before doing so. Do you think wearing gloves is better for your health? Yes, until you realize that you are putting plastic in your food and particularly toxic chemicals (microparticles) in your preparations. I eat a baguette daily (I'm French) and pastries when I want them (often, lol). I never feel sick from either of them and have eaten them for over fifty years. Even in the kitchens of three Michelin-star restaurants, they don't wear gloves. For what? The porosity of gloves retains bacteria more than the skin of the hand. French regulations say you must wear a glove exclusively over a bandage when an injury occurs. However, you must change the glove as frequently as necessary. Have a pleasant day.
