On the second level, you can do the sorting later in the process to conserve some conveyor belts. Basically instead of a "V" shape, you make a "Y" shape, where the starting conveyor is shared between both fruits.

That is the greatest Dev problem to have. omg someone randomly got me a ton of sales.

I hope the makers of this game do more with just the driving portion when that level of control ability to miller everything would be a lot of fun in the right scenario. Just up to the devs to find that and implement this vehicle control, I'd buy it!
