Gumbo Collard greens
2 lb collard greens
1 onions
1 bell pepper
2 stalks celery
5 cloves garlic
1/2 tbsp salt free cajun
4 oz chicken andouille sausage
1 lb smoked turkey
fat back or butter
1 tbsp butter
2 tsp better than bouillon
2 tbsp dry roux
1/2-1 tsp gumbo file
2 tsp sugar
1 cup okra
scallions
Creole seasoning
Corn Pudding
1 can sweet corn drained
2 cans cream corn
1/2 cup evaporated milk
1 12 oz bag frozen corn ( could also use 2 cans sweet corn instead
4 tbsp cornstarch
1 tsp vanilla extract
1/2 cup sugar
5 eggs
1/4 tsp nutmeg
1 stick butter
1/2 tsp salt
Cornbread
2 boxes Jiffy Cornbread
1 tsp honey (optional)
1 tbsp brown sugar ( optional) leave out if you don't like sweet cornbread
1 cup greek yogurt
2/3 cup whole milk
1 stick salted butter
2 eggs
1 tbsp shortening or lard for the skillet
