Just whipped up a batch of these using your second recipe with 450 g flour. I'm waiting for them to rise. I gotta say, the dough was still really sticky to work with but hey, they are probably going to be just fine. I'm not really a fan of Hawaiian rolls but my family loves them. I made these using the second recipe, and they were amazing! It seemed to be missing something, though, and I realized there was no salt! I will definitely have to add that in next time. I see you added salt in the video but not in the recipe in the video description, just FYI. Thanks for a great recipe! Good job.
I made recipe 2 a few weeks ago, and they turned out beautifully! 😊 I went to make them a second time, realized there is no salt in the recipe, and took it upon myself to add some (10g), but then they didn’t turn out nearly as well, didn’t rise as much and not as fluffy and soft. What are your thoughts on salt affecting the end result?
So if I did the math correctly, you went from 64% to 50% hydration? 324g liquid / 500g flour vs 275g liquid / 550g flour? That's quite a drop but it worked! Question - after taking your starter out of the fridge, do you wait for it to come up to room temp before feeding it, or do you feed it straight out of the fridge? Does it matter either way?
