Yes! Today is Sous Vide Tuna Roast and Spicy Mayo, this is so fantastic and I can eat this every single day. The flavor is fantastic the sauce can be eaten with anything and this dish is so simple and easy to make that anyone can do it.
HOW TO COOK TUNA ROAST SOUS VIDE
I cooked it for 2hrs @ (110°F / 43.3°C)
Tuna Roast Ingredients
4lbs Yellow Fin Tuna Loin
The Tuna Rub
2 tbsp Sichuan pepper corn or 1 tbsp white pepper corn

2 free-range egg yolks
1 tsp Dijon mustard
1 1/3 cup of oil (canola oil)
2 tbsp White Wine Vinegar

In Brazil, we call limes "Lemons", or sometimes "Tahiti Lemons". Meanwhile normal yellow lemons are usually called "Sicilian lemons". Hope that explains it

You should add the mustard earlier for making mayonnaise. Mustard contains a fair amount of lecithin - more than the yolks - which is the chemical responsible for allowing the fat emulsion to take place. A lot less work, your arm will thank you.

A stick blender and a tall, narrow blending cup contain no lecithin, but your arm will thank you for using those too. If you use a blending cup that barely fits the head of the stick blender, it pulls the oil in at just the right rate to prevent it from breaking, and it only takes about 20-30 seconds to get a good emulsion. I make mayo from start to finish in under a minute all the time.

1. Most people do not realize how AMAY-SING high quality tuna steaks taste. Americans hear "tuna" and we think canned dog food. But great tuna like you made is awesome. I'm so glad to not see steak all the time here. This looked amazing and DELICIOUS. My only issue is that the channel name stunts them. I'd love to see what Guga can do with a pressure cooker, for example. Edit: yes I'm subbed to Guga's other channel.

In my country you can left the tuna outside for 2 hours in the afternoon due to the scorching temperature around 42C avg. Bam! instant sous vide !

Was that a heat gun you used to sear the meat. I've heard they are an alternative to the searzall but the searzall seems to be only available through independent ebay sellers in my country, so im not sure which to buy. I know your did the searing methods tournement but think most people watching your channel are most interested in the heatgun and searzall so a direct comparison video would be interesting. When you whisk in the oil, I'd recommend wrapping that towel you have on the cutting board around the bottom of the bowl so that it creates a resting area for the bowl and makes it more stable. It can be a struggle to slowly pour in oil while whisking with the bowl moving like that.

Oh, I did that. it works for the first few minutes, after that you just go with what ever. NEVER AGAIN doing it by hand. I just did it to show it can be done. But I was tired. lol

I know mit-cuit tuna, where you toss the room temp tuna in a pan for a few seconds on each side and then serve it. Which is delicious. I am wondering if 45°C or 110 F isn't a bit to low for 2h? Its not pasteurizing and excellent for bacterial growth on the inside. If you salted it enough or even used pink salt that would also take care of the bacterial growth. But still i am a bit surprised by this temp setting. You would also not eat your sashimi after it has been 2h in the sun. Would you?

love it bro - mustard helps the emulsion early on - add it to the eggs before the oil - the mayo will be easier to make

A small tip for making the mayo. Add the mustard with the egg yolk when you beat them not at the end. This way its a lot harder for the oil to break thus making it a little easier to make mayo by hand

Does the peppercorn give it that numbing heat effect? I have some of those but they didn’t seem to work for me. Just had a weird flavor, no heat or numbing sensation with mine.

Love your channel. It's inspired me to get all the same equipment. This weekend I did my first test ribeye, fresh Dungeoness crab, corn and asparagus. I missed the BBQ taste on the ribeye. The crab was awesome with butter and garlic infused. The corn was incredible with butter and salt. But the asparagus was Amazing! Thanks for the inspiration! 👍

I only comment because I love your work, hate to see it bogged down by repeated nonsense. The first halves of the videos are awesome and have great production value. Hi guys thank you for your videos is great, a little detail for mayonnaise, instead of putting the mustard after raising the mayonnaise, started by putting the egg yolks and mustard and then the oil, it is easier to ride and you can not miss it. (sorry for the orthograph, I'm french)

Agree, it's easier to make manually if you add more of the wet ingredients at the beginning. I've done a lot of hand-made mayo in my youth (not anymore, or rarely). I don't usually put mustard in the mayo, but do use lemon juice. I generally beat the yolks with the lemon juice and then start adding oil. It's easier and faster.

After this video, I went back and watched the ribeye cap steak video. I have a request maybe; how about a creamed spinach SV style, using maybe fresh spinach. This is a big thing as a side dish for high-end steak houses (since you mentioned 5-star restaurant). And yes, make the salad, or at least shoot us the recipe.

Have you tried marinating stake in lime juice. It should be the same as pineapple or lemon.

Hello man! Thank you very much for the new video. I've been about to make some sous vide shrimps recently and the only video you have on it is a salad. Do you have any plans on doing just the shrimps? I think you'll come up with a perfect marinade and sauce, as you always do! P.S. I've been also suggesting a temperatures experiment a few videos ago, you've said you might give it a try. Any updates? :) Thanks again!
