german chef here. if you want you can try to butterflycut the pork and dont cut it in halves because the best schnitzels are big and very flat. also if you want the best taste use clarified butter to fry it and go with a bit less oil so bubbles can form better. would love to see you try it.

Secondly the 'input' had nothing to do with the content of the video, I remind you it's about finger food dimension pieces of 'Schnitzel', no need to write a guide on how to best have the biggest pork Schnitzel and how to cut it, if you do this then it means you haven't watched the video and didn't get what it was about. Yeah Fondor is about 60% Salt... so to salt it beforehand and put THIS much on your meat may not be the optimal way to use Fondor

I am from Germany, and we always fry our Schnitzel in butter because it will taste a lot better than in oil. Also, you can use Fondor on anything.

Butterschmalz - clarified butter - Ghee. Regular butter can‘t be used if the heat is too high because you will burn it.

As a German, I would like to give you a schnitzel tip: the meat must be thinner so that the light shines through. And when you fry it, you have to move the pan back and forth and make waves with the oil. This makes the breading wavy and allows air to get between the breading and the meat. That's the way my friend.

i think they appear thicker than they are because he made them so small its more like mini schnitzel instead of a real Schnitzel. When he flattened them they were kinda thin. Maybe its also because of using the wrong meat.

Agree! I hate it with a passion. No one who takes food seriously should use this over processed shitty toxic bullshit on their food. It’s the same people dislike on cheap delivery food (Glutamat) but here they accept it. Too much salt and stuff. Just use fresh herbs or good salt and pepper.

As a German, I am of course familiar with Fondor. Fondor is nothing else than a cheap but very flavorful spice mixture (flavor booster). However, I haven't known anyone who really uses it for decades... But it is still available.

Fun fact: Maggi is everywhere in Germany, but the company was actually founded in Switzerland. The experiment should work out the same with Knorr Aromat, though (which definitely also contains MSG ;)

As an Austrian you have to work on your Schnitzel. I know Germans are less strict but it’s a holy dish in our country that follows certain rules. It’s what keeps our country at bay and unites us in its beautiful, airy tenderness.

I think it's similar to Aromat, which my grandma used to put into just about everything. It took me forever to understand that this was the taste I was actually often looking for when I thought food wasn't salty enough. I was missing the MSG but didn't know what MSG or umami was.

I have to say that I added the compound butter made with fondor to the sous vide bag along with my ribcap steak that I seasoned as usual (like Guga with salt, pepper and garlic powder) a couple of thyme stalks. I then seared my 135F ribcap steaks in a little duck fat - IT WAS DELICIOUS!!!!!!!!!!!!!!!!!!!! Definitely added a little extra umph to the flavor. The family noticed it was a bit more special.

You should try chicken salt for one of your videos. It is a popular seasoning used in Australia, usually on roast chicken but also used as a seasoning for fries.

The German MSG from Switzerland Maggi is actually a Swiss company, but really popular in Germany. We also have Maggi products here in Switzerland, but Maggi Fondor is not that popular, cause we have Aromat. Which is actually quite funny: Aromat and Fondor are basically the same thing. Aromat is from the German company Knorr, but is really popular in Switzerland, while Fondor is from the Swiss company Maggi and is popular in Germany.

It’s not just “original Wiener Schnitzel ist made of veal”, it’s a requirement of German law that Wiener Schnitzel be made of veal. For a pork Schnitzel done the same way, it has to be called “Schnitzel Wiener Art.”

You need to sway the schnitzel around in the pan with loads of butter or even better clarified butter not fry them like this. The swaying will make the breading bubbly and light as a schnitzel should be :D

The next one you should try is Aromat (Made by Knorr brand) It's a seasoning we used a lot in South Africa, but I'm sure it's popular in other countries.

fondor is something that is more used in austria and especial in switzerland. its more or a less combining diffrent ing. that have a flavour boosting property to it, i still just go with plain msg XD

Hi Guga, try frying the schnitzels in clarified butter instead of oil. It will give them a very nice buttery aroma. The best meat for schnitzel (imho) is veal. Enjoy

It depends, not every schnitzel comes from Austria. Wiener Schnitzel, of course, does, but pork schnitzel, for example, is said to originate from Germany. Generally, it can be said that schnitzel is both Austrian and German.

@@nolram in German speaking media there’s quite a lot educational websites like Galileo by ProSieben talking about how schnitzel as a concept itself was already a thing back in Constantinople 1000 years ago(the name itself is ofc German and far younger), in English speaking media you’ll find many talking about how it’s also been a thing in italy(also said in German media but after the Turks, no mention of Turks in English media somehow) no matter if turkey or Italy was first, it wasn’t Austria by a few hundred years of a difference, it just spread to Austria and Germany and both have their own ways of making it, it’s a regional dish in both countries, whether Austrians consider it their national dish doesn’t matters, it’s a thing in many other countries too so by their definition it’s also a national dish everywhere else

Schnitzel is from Italy and not Austria, Wiener schnitzel is just a city version of the schnitzel, not even the name schnitzel is Austrian because schnitzel comes from middle German dialects and not from any bairisch dialect which many Austrian areas are part of

But the version i enjoy most is from vienna, like kebab wasnt inventet in berlin, but the version most people know is from berlin

Stop with your idiocy, any historian disproves your stupid claim, it’s Italian with a germanized name for the German people and it is very popular in the DACH area wich is why many people outside of DACH think its from either Germany or Austria, its a national dish in both countries and also in Switzerland which is why cordon bleu exists

I'm writing this in English for any non-German speakers seeing this comment. Schnitzel was made before the German and Austrian identities split into more distinctive identities. Schnitzel is considered a traditional dish of both Germany and Austria. This is almost like saying that Pizza isn't Italian because tomatoes don't come from Italy. It's worth saying that acknowledging that this split is a recent historical development doesn't invalidate it.

For the Schnitzel you should try pieces from the pork neck. They have more fat and are waaaay more tender in my opinion! Also: Fondor is awesome! Never tried covering a steak in it. Will try that soon! Thanks for the idea, Guga!

Hello I am from germany. Fondor is something to put on either after cooking or about 20 gramms per 100 gramms of meat before. Since it's 60% salt and easily dissolvable. If you were to dry age the steak you could drown it in fondor you could try that next.

I'm german, never heard of it. However, Maggi ist more known for its sauce and the brand name is also just used as the name of the sauce. And Maggi sauce is basically soy sauce, except, that maggi is actually not really a german brand, but a swiss brand. Although it's all over german speaking countries, including Germany.It's made originally with wheat protein, but since its founding around 1900, the recipe has varied, I think.

In deed "Fondor" (Maggie/Nestle) is not the original in German, but "Aromat" (Knorr/Unilever) is. As many said use instead of salt, as it is 60% salt already + MSG (MonoSodiumGlutamate - NatriumGlutamat for Germans) and some spices like Kurkuma.

Dear Guga, As a half german and half autrian living my whole life in vienna I have to tell you a few Things. Schnitzel is Austrian, not German. It should be veal and if it is not, pork is okay but for most of us still third or fourth choice after turkey or even chicken!!! You should really use veal next time. Pork is fine but the real Thing IS VEAL!! Furthermore in Austria we have an issue with our neigbours putting Sauce to the Schnitzel! The lemon was well aded but you should squeeze it a bit over the crust (austrian german "Panier" or in Germany "panade") if you like. However most importantly because sauce really should not be there. We use cranberry jam, but the one that has some real berries within the jam. Not fully blended!! I really like your Video but this "sidedish" is probably the most important dish of our culture and I want you to do it right bro! A good sidedish for that would be "erdäpfel-vogerl salat" which should be translated something Like "Austrian potato salat mixed with lamb's lettuce". Look up "vogerlsalat" or "rapunzelsalat" to know what I am talking about. I really hope you read this comment. Keep up the grear work Yours felix (or andy)

I'm a German in CA, I always have fondor on hand (and Maggi sauce and Aromat, a similar powder and of course my own fortified MSG) but that was way too much in the bag, it's very salty. Haven't thought about making a butter with it, so that will happen shortly for sure! And that side dish is a main course. Real Vienna Schnitzel is made from veal and fried in clarified butter, I'll be eating that next week in Vienna on vacation. Never with a sauce, maybe with some lemon to sprinkle on carefully, you don't want the crust to get soggy and the crust has to lift off the meat during cooking. Jägerschnitzel (hunter's schnitzel) would be with a mushroom sauce, but it's not breaded. Sauce on a Vienna Schnitzel might be a capital offense in Austria, so be careful with that ;-p

Me as a german at around 1:00 "yo...guga thats enough......GUGA Stop please.....OMG WHY SO MUCH....BRO....XD " We have 2 MSG´s in Germany...Fondor (Maggi Brand) and Aromat (Knorr Brand) and i like them and use them as well on a regular basis but when using it be gentle with it and dont add more salt. One light coding with it and a little pepper and you are good. When i saw that mountain of Fondor on your steak, i could feel the saltiness in my mouth while watching and was shaking my head with my tounge out :P

Guga... You NEVER use oil for a Schnitzel. Use clarified butter. Also another tip: season the meat with some lemon juice before breading. The water content will puff up the crust/seperate it from the meat, which is what you want for Schnitzel.

u dont do Schnitzel in Oil! u put them in Butterschmalz thats Butter with no Water in it! Thats the only way too make them right. U dont have Brötchen where u are we do them in dryed and shredded Brötchen or Semmel. Tastes much better.

You should try Surr-Schnitzel, it is marinated in something for over 20-30 hours and it is fantastic, I tried it visiting my Girlfriends Grandma in Austria and it was fantastic!

The best part of your "schnitzel" (Wiener Schnitzel) is that it comes from Austria and is either made from veal (authentic version) or pork (cheapo, but tasty). You can make it from chicken or whatever, but that's a whole different category. It's like: is chicken steak still a real steak? And please, dont cut it in stripes and no weird sauces. Safe this for the steaks.
