Glad to see you using packaged cheese.. Most people don't recommend using it . They say to oily.should use block and grate it yourself. Good to see you giving a recipe with these ...Thank you from the novice cooks on using packaged cheese.. We appreciate this ..

Some say because of the white FILM on it that causes the cheese not to stick to the noodles.

I use ground mustard, a splash of paprika on type. At least 1/4 pound of gruyere or Swiss. Cavatappi for the noodles.

Hi I just came across your video for baked mac&cheese. I watched and I was surprised that the statements you were making of how it SHOULD be is all a matter of opinion, even tho you were saying them as fact. There is no oneway of making this, people have their own recipes handed down thru their family and they like it, I love having the brown cheese on top, ( nothing wrong with that), that doesn't make it wrong, or using valvetta cheese again nothing wrong with that, there is no certian way, everyone is a creator of their recipe and how they make their food. Now I seen this video is from 2yrs ago from today when I watched it, so I hope now you may have grown more and educated yourself, and learned how to express your ways of cooking and what you add or don't add as YOUR OPINION and not as fact or the way it should be. Thanks for giving the proportions relative to how many eggs per pound of nooodles, etc. Question: I love the taste of my mac and cheese (based upon my late mother's guidance), but it is firmer than I would like. Do you think reducing the number of eggs will help? I typically use 1.25 to 1.5 cups of noodles, 1.5 to 2 cups of cheese, 12-14 ounces of evaporated milk, and 2 eggs.

Thank you for sharing .. Your the first channel or chef that I have seen use pre shredded . They always say it has anti caking agents which makes it difficult to melt . Also I thought brown not black on top is what you’re looking for .Anyways , great technique in melting all of the cheese with the hot macaroni. Thanks again for sharing .

No time limit. Cook al dente not undercooked but never cook it to doneness. Remember it's going to be in the oven for an hour. You don't want mushy noodles.

Your mother and my other used block cheese because it taste Hella better. The shredded cheese has wax and other properties that keeps it a couple of levels below the blocked. Please cook both same block cheese as shredded if you're true to yourself it's something special, unique, more of a rich taste going on with the block cheese. Yours wii be good as well. The block just has the 'IT' factor.

Ayooo cooking thanksgiving for the first time. I’m wondering if I’d be okay using no sour cream ? And I have one bag of shredded cheese, one block cheese, just for a 3 person meal, is that solid? I also only have regular milk and plan to use about half the box of noodles.

You know the macaroni is not done until you see the spots on it that's what give it flavor and I am a chef and I never seen nobody put two sticks of butter in their neither that's too much butter cheddar cheese got lot of Greece

That pre-shredded cheese has a lot less flavor than cheese that you shred yourself in the processor. Plus it’s got additives and chemicals on it so that it doesn’t stick together plus it cost twice as much. I don’t know any shifts that use pre-shredded cheese they always say not to

Yes, they say not to use it because of the anticaking agents (potato starch, rice starch, etc). Those agents make it hard to have a good cheese pull (melt).

Never understood that. My mom use to have me shred the cheese. I hated it. This is quick, simple, and you get to add a lot of different cheeses without all of the fuss.

Everyone knows it is a myth that adding oil to water helps pasta not stick, "Chef." I love watching all of the oil rise right to the top, lol. You are capable of stirring noodles so they don't stick, aren't you? And using two sticks of butter will only make your mac & cheese taste like butter (and too much seasoning), not cheese. Truly awful.

CHEF? From what school? Every chef knows pre shredded bagged cheese isn't all cheese and so bad to use compared to freshly shredded. And oil in pasta water? Again, only salt is taught in culinary school. Please share your actual schooling to call yourself a chef.

Nothing taught in Culinary school can prepare you for real world restaurants, (I've owned 2), it teaches you how to cook. Chef's are administrators. Do some research on your topic before you open your mouth. Now go Google self taught Famous Chef and then go critique them as well since you have so much spare time to question other people's credentials.

All I ask is for you to explain your reasoning. At the end of the day it's all processed cheese. One just has a coating to avoid sticking. That coating melts once heated. I've cooked Mac n Cheese 100 ways. There is literally no difference. I shredded cheeses for my mom all through the 80's and my Mac n Cheese taste, feels, smells, and cooks just like hers.
