Hello Gorgeous friends! I hope you enjoy this video of a classic spaghetti all nerano. It's truly so outstanding, it might not look it but I promise you, it's absolutely sensational! Thank you to Stanly Tucci for bringing this back to life and introducing it to the world and The AMAZING chef at Lo Scoglio that created this one of a kind magic! It's amazing how a few humble ingredients can create something so delicious, it's true Italian "farm to table" kind of cooking. IF you have my recent cookbook At My Italian Table, this recipe is in there (page 92) but the amounts I used for this video are written below! Just as a friendly reminder that these types of videos are in ADDITION to my regular content not instead of. It's just to give you some more food Inspo and to share more recipes and ideas in general. 4 Small Zucchini
8oz of Spaghetti
1/4 cup of Olive Oil
Salt
Parm and Pecorini (use to taste if you like)

Laura, been watching you since I was 24yrs old. You inspire me so much that my parents bought me my first oven. The first thing i made was you recipe for banana bread. This dish is a blessing to me in my pregnancy. I’m in my trimester and I haven’t been able to stomach anything with severe nausea. My blood pressure is very low and it’s just so hard to eat. My tastebuds are out of wack. But this dish is saving me right now. I switched the garlic for a little lemon zest because I can’t take garlic right now. Mind you I’m Puerto Rican and I put garlic in everything. But thank you so much for this recipe it’s definitely helping me and my baby. Con mucho amor!❤

Laura, as you would say, "this is Perfection". I had some zucchini in the fridge, and decided to make this recipe. It was so yummy and the zucchini tasted sweet! Something my nonna would have whipped up in the kitchen back in the day. Thanks for sharing it!

I love an meaty lasagna as much as anyone, but my favorite pasta dishes are vegetable pasta dishes--and this is just a beautiful dish! I'll definitely be having this zucchini dish soon!😊

No it absolutely does not. Real Italian cooking pays attention to fresh in season ingredients and cooking them just right which triumphs just adding tons of spices to something

We slice our zucchini a tad thicker, fry them till brown but they retain their shape. Then some of the frying oil is essentially the sauce. Topped with fried breadcrumbs & Locatelli.

Zucchini is a very overrated veg in my opinion, maybe it is the part of the world I live in, it has no flavour.

I can't argue, because I hate beets, and everyone I know loves them😂. There's always zucchini bread--can never go wrong there!

It’s not overrated in a pasta because if cooked correctly. It will taste like butter, completely lose the zucchini taste, and without the skin it will substitute that thick creamy buttery taste hugging pasta minus the calories

Fry the zucchini in evo till golden and put them aside. Add to the used oil the spaghetti and finish to cook with pasta water. Off the heat add fresh basil and a mix of grated provolone piccante and parmigiano till creamed. Pepper to taste and serve: these are the real 'spaghetti alla Nerano'!!! Not at all how I’ve ever had it. If you fry the zucchini and set them aside you get fried zucchini on top of spaghetti. The zucchini cooked down into almost a paste is what gives it its signature taste and creamy texture. The restaurant that made it famous creates a creamy emulsion with the zucchini (as shown in this video) and that’s absolutely the key. Definitely not just provolone but pecorino!

Check the real recipe: you'll see that the zucchini must be golden and not a mashed pulp and they must be added to the spaghetti at the end without smashing them and also these spaghetti call for provolone del Monaco which the closest cheese available is Auricchio provolone piccante. Do me a favor: try my way and you'll find a totally different gusto which will blow you out xxx

I have tried the original recipe lol literally at the place that created this and made it famous. It’s absolutely more than fried zucchini on top of pasta. But the beauty of cooking is that people can do things how they like! This is just how I prefer it.

I've been making this for years, but I had no idea it had a name. I got hooked on aglio e olio as a quick, filling, and cheap meal. But eventually it kinda hit me that nutritionally speaking, I was eating a loaf of garlic bread and calling it dinner. So I started adding a lot of green or leafy vegetables to fortify it a bit. My favorites for this were zuchinni, asparagus, fresh spinach, mushrooms, and any and all combinations. I imagine each one has _its_ own name too. 😁
