@@ChefSaito I did from a Larson's in Shinjuku, ochi. Lots of cod in Canada we eat it once a week.

it seems there is only frozen cod roe available around me, is there a big difference in quality between fresh & frozen cod roe?

There probably is a very expensive non frozen version of Mentaiko somewhere in the world but for this dish anything you can get your hands on should be fine. Just make sure your not getting the packet of pre-made Mentaiko sauce. They are just full of artificial stuff and not as good.

There is really no “fresh” mentaiko because the curing process take time. That process also suck moisture out so the difference between frozen and fresh is negligible
