☝This creamy mentaiko pasta is my go to Japanese spaghetti recipe. When I want something somewhat rich but not overly so, I make mentaiko pasta.
A little bit of cream, butter and soy sauce are the main ingredients. And of course karakuchi (spicy) mentaiko. Spicy cod roe. Also known karashi mentaiko. Which is also known as pollack roe. Tarako is the non-spicy version of mentaiko.
Never heard of mentaiko? These are tiny little fish eggs that are slightly fishy and pack a ton of flavor. You can get them regular or spicy. I prefer spicy.
You can use mentaiko in many different ways, such as for rice in onigiri, pizza and other baked goods. Japanese style pasta though is likely my favorite way to eat it.
😛 I'd recommend you use an Italian pasta such as Rustichella. I've used different types of pasta including spaghetti, chittara, and linguine. All of which have been pretty comparable and would work will with this mentaiko sauce. Also you want to use whole soy bean (marudaizu shoyu) soy sauce to get the best results.

All you need to top the pasta off with is a little bit of nori (dried seaweed) and shiso (perilla) leaves.
If you enjoy a creamy mentaiko sauce, this has just the right amount of cream and butter. But if you like things a little saucier reserve some of the pasta water and add it at the end when you mix everything.
I've had mentaiko spaghetti swimming in a pool of cream which was wayy too much for me. If you like that kind of pasta by all means just increase the amount of cream and butter.

Just got back from Japan. Every hotel breakfast, I noticed, Japanese gravitated toward mentaiko. They would usually cut up one sac into thirds. And people ate it over warm rice. It was probably the most popular item for the Japanese in the buffet.

ARIGATO GOZAIMASU !!! I forgot that I fell in love with this dish in japan. I remember my husband buying it for me one day and I was so pissed because it wasn’t what I wanted and I thought it was weird and fishy but oh my gosh I fell in loooove with it! One of the best mistake purchases of my life! If I can find these eggs I’m making this dish oh my gosh it’s so simple!

We loved it there it was as amazing as I knew it would be and yes of course I looked on amazon for some mentaiko!! It’s already in my shopping cart lol when I try it I’ll let u know about it! all day i eat like a shark yeah it wouldn’t seem like an Italian pasta dish but that’s great I’ll look into that too because I didn’t find what I liked on amazon so I’ll look that up as well. I am actually trying to learn how to cook a lot of the Japanese dishes I’ve enjoyed there..it’s why I found you. You all help so much when you teach us how to cook and I for one am so appreciative. Honestly sad but true I didn’t know how to make rice before I learned it the Japanese way 🤣😭

For presenting pasta: just use tongs, lower the pasta into the serving bowl, and twist the tongs while lowering.

suggestion: 1. work with a tong (instead of chopstick) as you dish the pasta over, twist pasta as you lift the centre to create a heap. 2. to get a lighter sauce, i replace cream with hokkaido or meiji brand milk. 3. also, sometimes i grate pamagiano reggiano (parmesan cheese) into the sauce to add on another layer of umami.

That looks so good! I love mentaiko with sushi rice, but never had the pasta. I'm going to try this recipe. I don't know where I can get chiso/shiso in Maui.

Just made mentaiko! I had to order the packets off amazon. I followed your sauce recipe but I had 1% milk, soy sauce, butter and kewpie mayo so I used that for the sauce and oh my gosh...instantly transported back to Okinawa 🥰

hey so i want to remake this pasta recipe by you, but i only have the tube version of the mentaiko.. is that okay? hard to find a fresh pollock roe here in indonesia

Would it work if I used dried tarako instead of mentaiko? I've been craving for mentaiko so I got one thinking they're the same thing..
