I spent _ages_ trying to find a suitable replacement for the peanuts (autism, don’t like dry crunch mixing with wet crunch, or warm with cold), and I’ve found it: cooked and cooled edamame! Still have that slightly fatty texture that vaguely alludes to the peanuts, plus soybeans play great with the other Asian flavours. You can even still salt/sugar/lime them with a little warm (not hot) peanut oil! ❤
This sounds delicious! I'm in the Southern Hemisphere so it's completely off season but I can't wait to try it once summer is here. Also, I think an avocado would be amazing contrast for the crunchiness of the cucumber / watermelon / peanuts combo
ตำแตงกวา -- thai cucumber salad -- is one of my favorite things. Something my favorite vendor adds is tamarind paste and I love the savory/sour it adds to the mix.

i just made this for dinner tonight (even though it's winter in australia haha) and i absolutely loved it. I put tofu in to have some sort of protein. i am asian so i drenched it in fish sauce. it was delicious thank you carla!!
This was really good. The spice is important, but she's a little more heat tolerant than I am. The peanuts are wonderful and should be made even if you don't try the salad.
This looks great- I think though I would leave out the MSG and granulated sugar though abad would rater cube the cucumbers 🥒! Great combo of flavours will try this for sure!
the day after I watched this video, my boyfriend got a text saying our neighbor had a massive amount of lemon cucumbers and did we want any? Gonna make a watermelon cucumber salad! Update: I made it and WOW so good! I've never had smashed cucumber salad before but a lot of my favorite food youtubers make them regularly so I was curious. After a lifetime of eating watery, flavorless cucumbers, I was shocked by how much flavor that first bite had. Such complexity to the flavor! I left out the chilis because I have no spice tolerance but I can tell it would be even better if it was spicy. My boyfriend served himself a bowl and had demolished it in a couple minutes.

Had the biggest watermelon and was looking for ways to use it up, this recipe is such a WIN! Bought the cookbook, then I made this two days consecutively and there were no leftovers either day. Now I need to go buy more watermelon/cucumbers so I can do it all over again. The juice left in the bowl at the end, mmmmm, yum, add vodka? Seems like he right thing to do...
