This is how you make Spicy Garlic Cilantro Potatoes (aka Batata Harra) at home.
What You'll Need:
- Fresh Garlic
- Fresh Cilantro
- Fresh Jalapeños
- Potatoes of Your Choice
- Salt/Pepper
- Fresh Lemon Juice
- Neutral Oil (for frying)
- Red Pepper Flakes (optional)
Step 1:
Finely dice your garlic, cilantro, and jalapeños and set aside for later.
Step 2:
Peel and roughly cube your potatoes so you have a mixture of differently-sized pieces. Add to a bowl of cold water.
Step 3:
Heat your neutral oil until it reaches frying temperature (350º-375º). Add your potatoes for their first quick fry (2-3 minutes).
Step 4:
Remove your potatoes and let them rest for a minute or two before giving them a second fry until they are golden brown. Remove and set aside.
Step 5:
In a sauté pan, add your garlic, cilantro, jalapeño, salt, pepper, and red pepper flakes and let them sweat for a minute or two (do not brown them).
Step 6:
Add your potatoes and some fresh lemon juice to your pan and sauté for a couple of minutes to let all the flavors marry.
Step 7:
Serve as your main, on the side of your favorite protein, or top with a fried egg for a fantastic breakfast.
Batata Harra is a childhood favorite of mine, so I really wanted to bring those flavors into my menu at Detroit 75.
