I throw some chopped onions along with garlic and finish it with shredded fresh coconut. If you don’t get fresh coconut you could add frozen or unsweetened shredded (not powder) dry coconut. It tastes so good. my kids didn’t hate greens when they were growing up. They still love any kind of greens.

I do that too. Also use chicken skins, or the fatty parts of a ham, almost anything that fatty and tasty! Thanks for watching and commenting :)

This technique works for kale, chard, radish, and all other brassica greens too. They are all delicious with this method. At the height of summer I include basil / parsley / carrot / fennel greens in the mix. Bacon-saute all the greens!

Oh man, I love making greens from the garden with bacon, garlic and onion! Delicious. Might be time to get yourself a lid that fits your cast iron pan, though. Splurge!

Yum.... I have a similar recipe using bits of ham... I’ve also used canned corned beef... so good as a hash with some shredded potato tossed in! We also have a nice big cast iron pan... best cook wear ever!

I use ham too, basically anything that adds flavour. Duck fat is heaven :)

Thank you for getting me interested in growing kale & swiss chard. I'm growing them along with other veg in pots for the first time in SW France. The kale leaves were mostly eaten by bugs except for the veins in the leaves, looked really weird. But lo' & behold! I now have a second growth of very healthy looking plants! I'm looking forward to a kale, swiss chard AND bacon symphony!

For the first time in my life, I tried to grow garlic last fall. I lost 65% of my garlic crop. I think I need to go back to the drawing board. I’ll be watching your how to grow garlic video.

love my cast iron pans=using them 30 years experimenting with kale--Vates dwarf,lacinto-dinasauer,-red russian like the vates//+ dinasaeur is first time this year--thanks for your experience/recipes

My Winterbore kale winters over in 5a / Downeast Maine, resprouting as grass appears giving me many meals along with seeds to replant in late spring / summer. Going to harvest my last batch today.

Mine always seem to die in the winter unless they are in a coldframe or something - they never come back in the spring. Maybe I'll try winterbore this summer.

@@maritimegardening4887 I planted one regular pack of Johnnyseeds Winterbore & harvested into Dec. & Jan, planted on the backyard slope facing South. I can not remember protecting the plants in any way. By the time the plants had stopped growing/going to seed, the plants were 4-5 feet tall. Hundreds of seedlings grew underneath the kale immediately & I harvested 2 large garbage bags of seeds tops equalling many quarts of seeds. A true bounty of kale to eat & seeds to plant & share. When I see the hill behind your garden, I am green with envy. Does it face South? I'd be diggin holes for plants & filling with compost/horse manure, surrounded by cardboard. My backyard, South facing slope is the last to frost & freeze by a couple of months!

I cook Kale in many different ways....sauteed kale, onion ,garlic and bacon is delicious stirred into mashed potatoes...I literally put it in everything...soups , stews, stir fry....once I asked my son to go out and pick around 20 kale leaves....he came back with cabbage leaves....oh, btw, the only thing I don't cook in cast iron is tomatoes, or tomato sauce

Yes I've read that tomatoes/acid can ruin the seasoning. That said, I use that very pan to make spaghetti sauce every week :) Not only is the sauce started on stove top - but it's also baked a couple hours in the oven. I'll have to try frying an egg sometime immediately after making the sauce to see how badly it affects the seasoning. I've notice it does stick sometimes so that must be the cause.

@@maritimegardening4887 That is something I have wondered about ! Don't the tomatoes react with the metal of the pan and give it a funny taste ? I would love to try baking my tomato sauce in the oven in cast iron. Wow. I thought acid and iron was a big no go. I cant use tomatoes out of a can. They taste like the can.

Yum! I usually smoothie mine, because no one ears it here in my home. I actually prefer cooked collard greens over kale, but kale in smoothie. Thanks for a great film.

I forgot to mention to use butter if you can. Sadly my butter days are over as I've become totally lactose intolerant in my 40s. I make up for it by eating more bacon :)

Love my cast iron cookware. I'm using my great-grandmother's cast iron skillet that was passed down to my grandmother, to my mother, to me, then someday to my kid. Actually, my kids will have plenty of cast iron cookware to share for I have added a lot of different skillets, pans, pots, and griddles to my collection. Love it!!! :-)
