I've been doing this business for 42 years. I have a fine dining background, but have also worked in more casual establishments. I don't know why, but I absolutely love listening to you and watching you do what I just did for 10-12 (or more) goddamn hours. I would love to someday meet you, brother.
Really love the sleightly longer format. It just seems to flow and you’re so chill. Appreciate seeing you actually showing people your sharpening your knife. Wish I was more confident with cooking shrimp. I'm always concerned with undrrcooking them and that causes me to overcook them and turn the shrimp into rubber.
