SPICY THAI BASIL KING OYSTER MUSHROOM RECIPE

Ingredients:
350gm king oyster mushroom, sliced
2-3 stalks of spring onion/scallion
¼ red capsicum, sliced julienne
3 cloves of garlic, minced
½ inch fresh ginger, minced
2 tbsp fresh lime juice
2 tbsp fish sauce
1 ½ tbsp oyster sauce
1 tbsp kecap manis/dark sweet soy sauce
Handful of fresh Thai basil
1-1 ½ tbsp spicy chilli flakes
Salt to taste
Oil for cooking
Little water
Method:
Heat up 3 ½ tbsp oil over medium low flame, stir fry the garlic and ginger for 2 mins. Then, add in the mushrooms.
Allow it to cook for another 2 mins. Now, add in a little water, 3 tbsp, continue to cook over medium high flame. Keep it covered.
Now, add in the oyster sauce, lower the flame. Also, add in the kecap manis, keep stirring then add in the chilli flakes.
Add some basil leaves and capsicum. Taste for seasoning.
Now, you may add in the spring onions. Keep stirring, check if the mushroom is cooked.
Finally, add in the lime juice and the remaining basil leaves. Turn off the flame and toss everything evenly until it's well combined. Serve hot with rice and enjoy:)
