To be fair, when cooking (or anything else) is in video form, you have the opportunity to do things over and over again and test before publishing something you believe is good quality. It's just up to the content creator to decide if they want to include any improvements or other takes. On a live cooking show, the content would be a lot more raw and you would see more tasting and adjusting, maybe a mistake here and there, and I doubt they would just gloss by it and pretend like everything is perfect. But if I ran a food video channel, I would want to upload the best of my cooking after I have critiqued enough tries to determine a recipe that's "perfect" for people to enjoy.

Can I just say how much I love that you mentioned how you control the temperature for reducing the tomato sauce because whenever I've made your weekday sauce it's like a spitting dragon and I spend ages cleaning my kitchen afterwards 🤣

Easy fix: get one of those fine mesh splatter screens. They're not expensive at all and work very well.

I’ve done some research trying to recreate this exact dish from Carbone and I found he used an onion soubise sauce as a base and either uses tomato paste or reduced tomato sauce (can’t remember) and then reconstitutes the sauce with cream. Can be pretty tricky to nail but can't wait to try this version!

What is onion soubise? ahahah🤣 I love that question❤ I'm french, and as far as I'm concerned, in my country, a " sauce soubise" il a bechamel with melted onions in it.( you let the onions sweat in butter until they are like a purée, low heat always turning with a wooden spoon( quite long be patient never color the onions with too much heat) then you ad flour( same quantity than butter) you let the flour cook to avoid that uncooked- flour taste( yukkee) then you ad milk, always turning with wooden spoon you go until first boil on high medium heat. Sea Salt, fresh ground pepper, that's french soubise. Pardon my English, hope it's understandable.😊

Hey Steve your videos are all so good. Always! I love that Calabrian chili oil and definitely a great idea to add it to vodka sauce. That chili oil is a lot more popular in the last few years. The one place I go to buy a lot of ingredients sells about 10 different brands of it. They also sell the dried Calabrian chilis hanging on a string. They cost $40 a pound but they are so light that you get a decent amount for the money.

@@emilynormandin1139 I put half in while I'm reducing the tomatoes to get the flavour in the sauce, then half at the end for the more raw smoked salmon flavour, as well as a little to garnish the top 😋 not sure if doing it in stages helps but it seems to create different layers of flavour! it's my absolute favourite :)

I would recommend adding the vodka after the tomato sauce is added. Vodka is more or less a flavorless liquid, and its primary purpose is to serve as a solvent to release and draw out flavors from tomato (and peppers) that are only soluble in alcohol. Once it has done this, you can evaporate it off with a bit of extra simmering, but if you add the vodka before you add the tomato, and you burn off all the alcohol, adding the vodka would have largely been a a waste (except perhaps for some of the flavors of the peppers which are only alcohol soluble). In any case, this is what I had heard from Alton Brown, and later, with a subtly different explanation, from Kenji Lopez-Alt explaining what he had come across in the writings of James Beard. This is the way I've been using vodka in tomato sauces. Could you do an experiment to see whether adding the vodka and burning off the alcohol before adding tomato tastes different from adding it to the tomato and cooking it with tomato? I'd love to hear your thoughts and observations on this.

This isn’t actually true. Same way you wouldn’t add wine to a sauce based dish after adding the liquid, you use it do deglaze a pan and build flavour profile to the vegetables or whatever IS in the pan. You wouldn’t just add the vodka or wine to an empty pan because then there is nothing to deglaze, so you’re essentially not wasting it - it still serves a purpose. And you wouldn’t add it once the other liquids are there, because it would be far too overpowering keeping the alcohol as 100% liquid and the flavour profile of the vegetables wouldn’t be a complex because you’re not building the flavour, you’re just throwing in all the liquids at one. It would take hours to burn all the alcohol out, even though you can only see a small about of liquid there

You should always put a lid on the pot when you're trying to boil the water. It will help it come to a boil faster and will save on the amount of energy you need to put into the pot and water, as less energy can escape through the top.
