Ingredients:
1-2 pounds Fresh Shrimp (16-20 count shrimp) peeled and deveined
1 1/2 tbsp. vegetable oil (or canola)
1 tsp sesame oil
3-4 garlic cloves, very finely minced
2 tsp ginger, grated or finely chopped (optional)
1 tsp chilli flakes
1/2 cup water
1 tbsp. Sriracha
2 tbsp. Ketchup or tomato paste
2 tsp light soy sauce
3 tbsp. brown sugar
Sesame seeds (optional)
Green onions, finely sliced (optional)
Red chillies, finely sliced or chopped (optional)
Directions:
Clean shrimp, devein and remove shell.
Preheat grill to 350 degrees.
Carefully oil the grates with a paper towel dabbed in vegetable oil.
Place shrimp on grill grates
Let shrimp cook for about three minutes and turn the shrimp over to cook both side until the shrimp turns white and pink.
DO NOT over-cook the shrimp, this happens when the shrimp curls into a tight ball.
Remove shrimp from grill and place into bowl. Or turn off grill to keep the shrimp warm.
Heat sesame oil in a large skillet over high heat using your grills side burner.
Add garlic, ginger and chilli flakes. Cook until garlic turns golden.
Add water, then Sriracha, soy sauce and sugar, Stir, increase heat to medium high, and let it simmer for 3 minutes or until the sauce starts to thicken to a thin syrup consistency.
Add shrimp into skillet and toss to coat in sauce and reheat, and cook for 1 - 2 minutes until sauce is reduced and coats the shrimp nicely.
Garnish with sesame seeds, fresh chilli and green onions if desired.
Serve with rice to soak up the flavorful sauce!
