Standing RIB ROAST Hot & Fast Grilled on BBQ - Prime Rib Roast

This amazing Standing Rib Roast (aka Prime Rib) was cooked hot and fast. Normally you want to cook your rib roast low and slow, but when you don't have the time this is a great alternative method to use. The big issue with this method is that it will not produce that edge to edge medium rare like sous vide or reverse sear. So you are trading time for edge to edge perfection.

When cooking HOT & FAST your carry over is A LOT! 😱😱😱 What that means is that when you take the meat off the grill you can expect 20° to 30° degrees to rise when the meat is resting. This Rib Roast was taken out at 115°F and before slicing it was at 145°F which is more like medium well. If you are trying this method take it our earlier if you want medium rare. However this cook was PERFECT and we were very happy with it. 😉

I'll buy bone in prime rib, trim completely. Remove back Ribs, separate the cap from the eye, save cap. Smoke the ribs separately. Truss the eye into a cylinder shape smoke at 225. Marinate the cap another day in MOJO or similar and grill to mid rare for the best beef fajitas or Tacos you can have.

I cannot understand people (other than for the purpose of presentation in video making) whom frenched their meat... I mean... that specific part you trim is the best part in prime rib especially if you slow and low cook the prime rib... trim it after... and put it in high flame till it creates crisps and dip it in sauce oh my God... If you cook the trimmed meat without the bone intact during the process it will feels like something’s missing... it’s just better cooked with the bone
