I like to cook briyani in same way with 1kg of Mutton. Can someone tell us right quantity of each ingredients for 1kg Mutton. Your response will be appreciated.
Brinjal - 6 nos (cut lengthwise) Tamarind water - 1/2 cup Chilli powder - 1 tsp Turmeric - 1/2 tsp Curry leaves - 2 sprigs Peppercorns - 1 tsp Cumin seeds - 1 tsp Fenugreek seeds - 1/4 tsp Peanuts - 1 tbsp Sesame seeds - 1 tbsp. Mustard - 1 tsp Gingelly Oil - 1/4 cup Salt - To taste Method...🍲 Take a pan, add peanuts and sesame seeds and saute for a few seconds and allow them to crackle. Once roasted, allow them to cool down and make a fine powder. In a pan, heat oil, add mustard seeds once crackle add fenugreek seeds, curry leaves, cumin seeds and peppercorns. Then add brinjal, chilli powder, turmeric and salt, add little water and cover and cook for 3 to 4 minutes. Once brinjal is soft, mash them little with the spatula and add grounded powder and tamarind water.✅ Now cover and cook for 3 to 4 minutes. Open the lid after 4 minutes and allow the gravy to cook for another 2 minutes so oil separates from the gravy. Brinjal Gravy is ready to serve with any Biryani...👍 Notes 1. Use Sesame oil to get good flavour to the gravy. 2. Black sesame seeds give very good colour to the gravy. 3. Try to use Indian brinjal but not Aubergine. 4. Don’t add any extra masala or ingredients, just follow the same recipe. 5. Do not add too much tamarind water then the gravy will become tangier. 6. You can slice or chop the brinjal.
