TLJ opening sounds exactly the same as TFA. if both played together they sound the exactly same not even a minor change. then why are they rehersing?

They used the old TFA recording on the TLJ album release for some reason. The recording in the TLJ film is the new recording shown here.

There will only be a clean recording available once the movie is released on DVD and the audio can be ripped from it.

He could be doing syncopate star jumps while conducting; the important thing is that the orchestra is playing together, and under his conducting, I've never heard an orchestra miss a single beat.

Usually conductors are slightly ahead of the beat, but it depends on the orchestra. when playing with click track it doesn't really matter. freelance film orchestras are going to play closer on the beat than a symphonic orchestra who are usually late.
