This is my Steak & Kidney Pudding, one of the most iconic and distinctly British dishes. A classic from Victorian times you have to have one S&K Pudding in your life. What makes it unique is the suet pudding pastry, made traditionally with the suet (fat) that encases the Ox's kidney. This makes a rich, crumbly, distinctly beefy flavour that envelopes the meat inside. I recommend you try it and let me know what you think.
FILLING INGREDIENTS
150g Oxtail
150g Beef Shin
100g Ox Kidney
1 medium onion
50ml warm water
1 tbsp marmite
2 tbsp apple cider vinegar
Seasoning
PASTRY INGREDIENTS
200g Self raising flour
100g suet
150ml water
1 egg yolk
5 - 10g salt

Pre-cooking the filling is a bit of a cheat. Interesting to compare this to Raymond Blanc's method which he based on Jane Grigson's, thus with a long pedigree. His best trick is to soak the kidneys first in milk, which removes that horrid tang of ammonia which otherwise gives the pudding a hint of dog pee. He also adds oysters, which sounds incongruous but is a real game-changer. Of course it needs hours to steam and it's the slow-cooking that develops the extraordinary flavour.

I had steak and kidney pudding for the first time at the Fox and Hounds inn, just north of Tavistock in Devon. There is nothing quite like it, it's truly the taste of rural England at its finest.

Not sure about your cooking method? It’s called a steam pudding , so why seal out the steam you may as well cook it in the oven , I’ve always cooked mine with a clean tea towel on top with a small ring of grease proof paper on top of the pudding to stop the towel sticking , and steam it , have I been doing it wrong for the last 20 years ? Would be interested to know your thoughts on the pros and cons of both methods, cheers John , miss your food busker videos 🤘🏻😎🤘🏻

Nor me, but love them in this pudding or a steak & kidney pie. I think the secret is cutting them fairly small so you don't get a big fork of kidney. Plus the oxtail.. must have oxtail for its concentrated beefiness! :)

John Quilter. I love your channel. Good job, buddy! I’m obviously from the US, but I’ve always wanted to try an authentic British breakfast. I love to make sausages, and that is the hang up. I don’t know or can’t find a satisfactory recipe for British sausage. I know it’s not the same as US sausage ( mostly fennel and chili flakes). I’d love to hear what you guys do.

Couple of classics would be Cumberland or Lincolnshire-style. I like making Cumberland because they're traditionally long & coiled, so less tying off. Buy by the yard, not a dozen sausages! For me, I use pork shoulder just skinned & trimmed of gristle. Give that a coarse grind, mix in a good bit of pepper, thyme, sage, salt and some cayenne, and add around 2oz of breadcrumbs (or wheat rusk if you can get it) per pound of pork to help bind it. Main thing is I think it should be >90% meat. Lincolnshire's much the same, except presented as 'normal' banger-sized sausies and the seasoning is more thyme & less pepper flavour. I think one difference between US & UK sausage making is US recipies tend to recommend seperate leaner meat & fat to get some 'ideal' meat/fat ratio, when a decent pork shoulder or pork belly should have enough fat to use without faffing around seperating those.

Hmmmmmm. Looks interesting. Can I just use a rice cooker? And how about the microwave? The other thing I could do is put a couple of chopsticks (basically wooden skewers) under the bowl, I suppose.

Hi! I wanna give this a go, however instead of doing a suet pudding, I want to do a suet pie. My question for you is whether it is possible to cook suet pastry in the oven (ie bake it)? I have seen recipes that say you can cook a suet based pie in an oven, but all these recipes say that you put the cooked ingredients in a casserole tray, then you cover the dish with a suet lid and bake for 30-40 mins. Is it possible to line the whole tray (gonna use a small pie tray) with suet pastry, then fill the cavity with the meat etc and finally cover it with a suet lid and cook the whole thing for 30-40 mins? Thanks! :)

Skimming that fat off the top the next day makes all the difference. And let's be honest - you're not being lazy using a mixer. I've never had kidney. I'm American and I've seen plenty of unusual cuts of meat in stores (trotters, livers, hearts, chicken feet, tripes) but I don't think I've ever seen kidney available in the supermarkets or the Mexican stores either. I would try this John.....but only for you do I do this.

Swoon .. oxtail and beef kidney. Delicious cooked separately, but bathed in your gravy and robed in your pastry. .. Otherworldly. As an expat it’s been decades since I’ve had anything remotely steak and kidney pie like. Gonna have to do this, suet and all.

If you use a small plate to set the pudding basin it rocks during cooking.. this helps as a form of alarm device.. no rocking.. no water! 😜👍🏻

Enjoyed the video but the quantity of ingredients for the filling is wrong. Just made this & there was only enough meat to fill half the bowl. Also, 50ml of water isn’t nearly enough, I used 150ml. Plus, it needed extra gravy on the side as it was quite dry. Adding Marmite is a good idea, added a nice savory element.

I dont like kidney so i just use steak and ale.....superb is not the word BUT you need to havce a family to have one this size. In a couple or if you're single this would be too much. Smaller ones would be recommended and adjusted cooking times are imperative.

Top ten!!? Number one in my book. Really good presentation. some great tips. I've seen and read variants, and I have to say I prefer chunkier pieces like chuck steak over your shin, but the addition of oxtail is worth trying. Also, be more adventurous with your liquids, Marmite is great, but get a bit of Worcester pep in there, and I also add a bit of mustard. Even a drop of beer or red wine. That said, I die for suet puddings, dumplings or pastries. Non-Brits out there, he's right, it's the ultimate comfort food, try before you die.

I was brought up on suet puddings....my family came from the east end of London where this was traditional fare. Mum would make a plain suet pudding on Sunday. We would have half of it on our roast dinner with gravy and then the other half with golden syrup for afters. I live in Spain now and still make it 😉👌

Weirdly enough, I think it would be easier to find suet than kidney at most of the grocery stores around me. Here in the northern US, suet is typically sold to put in bird feeders--woodpeckers love it. However, I am confused as to why this is steamed like a pudding rather than just baked straight in the oven.
