Steamed Banana And Syrup Sponge Pudding, With Vanilla Sauce

If you've been following this channel recently, you may have seen some collaborative videos with Babatunde in Nigeria where I have been following his directions to try to make (and eat) some Nigerian style foods here in the UK. Now the turn tables! This is my version of a classic British steamed sponge pudding, flavoured with banana and golden syrup, and served with a vanilla sauce - so hopefully, part 2 of this set will be a video showing Babatunde and his wife cooking and tasting this.
Here are the ingredients and recipe guidelines (NB: a 'cup' here is any cup that holds about 225ml):
Ingredients for the sponge pudding:
1 heaped cup self-raising wheat flour (or plain flour with a half teaspoon of baking powder)
3/4 of a cup of white caster sugar (other sugars will work if that's what you have)
1 cup of softened butter, vegetable margarine/spread or vegetable oil
1 egg plus the white of another egg
1 ripe banana
1/4 teaspoon each of ground star anise, cinnamon and nutmeg
(You can use more spice than this if you want, but this blend, in this specific amount, just enhances and intensifies the banana flavour)
Golden syrup or other thick sugar syrup, or honey
Method:
Select a heatproof bowl or pudding basin that will contain at least 3 cup measures (test this with water, then tip it out and dry the bowl). You will also need a saucepan or cooking pot into which this bowl will stand - ideally big enough that a lid can also be added to the pan.
In a large mixing bowl, blend the sugar and butter with a wooden spoon until they form a smooth paste.
Separate the yolk from one of the eggs and set it aside. Add the other egg, plus the separated egg white, into the sugar/butter mix, and beat the mixture until evenly mixed.
Peel and mash the banana - add this, plus the spices, to the mixture and beat until combined
Add the flour a little at a time, mixing and beating until it is all combined together
Smear a little butter around the inside of the pudding bowl, then add about two or three tablespoons of syrup into the bottom of this bowl.
Add in the cake batter on top - try to add it fairly quickly so it doesn't just displace the syrup up the sides of the pudding bowl.
Put a layer of greaseproof paper or baking parchment over the bowl, then a layer of foil; press these down around the rim and secure tightly in place with string. Trim any large excess pieces of paper or foil.
In the large saucepan, add enough water so that when the pudding bowl is added in, the water level will rise to about 2/3 of the way up the bowl. Place this pan on a hob or cooker top and bring the water to a rolling boil.
Carefully place the pudding bowl into the pan and adjust the heat so that the water is just boiling gently.
Cook for 90 minutes, but check the water level every 15 to 20 minutes - do not allow it to boil dry - top up with additional hot water when required.
Test by carefully lifting the bowl out of the water, uncovering and probing with a metal or wooden skewer or stick - the cake is fully cooked when the stick comes out clean.
Run a knife around the inside of the bowl to ensure the cake is not stuck to the sides.
Place a plate over the bowl and carefully (it is hot!) invert plate and bowl together to turn out the pudding.
Add a little more syrup to the top of the pudding if desired.
Ingredients for the vanilla sauce:
1.5 cups milk
1.5 tablespoons sugar
2 heaped teaspoons cornstarch (cornflour)
1/2 teaspoon vanilla extract, or vanilla flavouring
1 egg yolk
Method:
Put the sugar and cornstarch in a cup and add a small amount of the milk - mix with a spoon to make a paste, add this and the egg yolk, and vanilla to the rest of the milk and whisk it all together.
Transfer to a small pan and heat gently over a medium heat, whisking all the time to prevent the mix from burning on the bottom of the pan.
As it approaches boiling hot, it will abruptly begin to thicken. Turn down the heat at this point and continue whisking. If it doesn't thicken, you can add a little more cornstarch blended with milk or water and whisk this in quickly as you add it. If it thickens too much, you can just add a little more milk and whisk that in to thin down the sauce.
Serve the pudding steaming hot, with the warm vanilla sauce poured over it.

7:25 we used to call those spatulas "meanies" because it would get all of the cake/cookie mix out of the mixing bowl and there would be no mix for us to lick clean.

in portugal we call them ‘salazar’, because of a dictator with that same name we had mid 20th century. very poor working class, not much food to go around, so it was rationed. just like the spatula, which scrapes the bowl clean.

tip: if corn starch is not available in your country, use potato starch instead. Works exactly the same :)

fun fact: corn starch only exists because of a corn boom a while ago. it happened because corn was found to be very versatile, and (i'm pretty sure) sugar was banned in certain drinks. (in the us at least)

Nothing wrong with eating a little cake or pudding batter. When ever my mum made a cake when me and my brothers were young we would fight (not literally!) over who would get to eat the last bit of cake batter left on the wooded spoon. Great video Mr Shrimp.

hey atomic, I want to thank you again for this channel. I spend way too many hours on youtube recently. i want to watch meaningful content with continuity, but it's mostly so damn depressing. ...cute and fluffy is ok too, but can't stomach it for too long (no offence, daily dose of internet). your site scratches the itch perfectly. sincere, intelligent, wide-eyed, and somehow even loving. even that short clip of organ music at the beginning of your vids is perfect. instantly reminds me of janis joplin and big brother. what I remember as a better time. the world you present in your vids represent many of the best things I experienced in life. it is exactly the world that I want to live in. bless you friend for your great channel.

As a non-British person I appreciate that you made the custard "the hard way" haha. I've heard about custard but never had it and never really looked into it. Definitely gonna try making this sometime!

I can always tell a recipe that's come from the UK because without fail, it will include "self-raising flour", an item which I have never seen or heard of anywhere else in the world. Folks in the UK seem to assume that it's so common that everyone should have it in their pantries at all times, but it's actually a very regional ingredient. THANK YOU so much for including instructions on mixing the ratio of flour and baking powder! I've never seen that before and had always passed over such recipes because I didn't realize the mysterious "self-raising flour" was that simple. Can't wait to see if Babatunde can recreate this in Nigeria!

I’ve seen it used a lot in the south of America , it’s used a lot for biscuits and different desserts . My granny used to wake up every morning and make her biscuits out of shortening, butter, and self raising flour , they came out perfect every time

I was brought up in the 1950's and my Mother made a lot of suet puddings.She would put jam on the bottom of the bowl.Sometimes syrup.It really stuck to your ribs.You could hardly move afterwards ,it was so heavy. It brought back memories of my childhood. Thank you and no I have never made one as they are too gut bustingly heavy.

I didn't even flinch when you ate the egg, as we in my country have eradicated salmonella in chickens so long ago that we don't even think about any risk anymore. And what was fun was that during the video, I was thinking that it would be a dish that could be done in Africa as most people don't have ovens there. And then you said that Babatunde would be trying it. I love his episodes.

@@MsAnpassad If you belive salmonella is eradicated in Sweden how about chicken sushi? Yea, you see. The true is due to vaccinations (hens), proper storage, higene and sophisticated health service we can happily ignore salmonella in the EU. So is the true with most of other bugs but don't take this knowledge to your holliday, especially to far away country you did not visit before.

@@mariuszfurman4767 Chicken, particular in restaurants, are often imported. Besides that, if you think that salmonella is the only danger with raw chicken meat, you are sorely mistaken. Campylobacter are quite common.

I have a baking tip. When you put the flour into the mixture, fold it in with your spoon (gently mix) because this will make the sponge lighter, even in steamed puddings

As an American I'd have to agree Shrimp, we'd say you made a steamed banana sponge cake and (a very loose) vanilla pudding. The word pudding is used to describe a very thick custard eaten by itself or with toppings like bananas and vanilla flavored cookies. We call that dish banana pudding and is super popular here in the southern US. Bread Pudding is also used to describe a dish using cubed stale bread soaked with uncooked custard and baked to create a dense and rich dessert when sugar and raisins are added or savory when herbs and spices are added.

Yes, Mike: it's called bread and butter pudding in the UK. The term is not nowadays used for savoury dishes but probably was a couple of 100 years ago when all puddings, both savoury and sweet, were made with suet.

Thank you for doing the custard from scratch. The custard powder is available here in Trinidad, but it’s full of nasty additives. Most people here do not make custard with it...they make ice cream! That sure is an interesting method of making a cake! And...and the way that egg yolk fit so perfectly in the wee glass just made my little OCD heart happy for the day! 😊

A tip for the handles is to make it a cross arrangement rather than the bucket style arrangement that AS used. it gives more control of the pudding bowl when picking it up out of the boiling water. that's what my mum and grandma(s) would do when they made their own christmas puddings.

AH! An answer to a decades' old question I never expected to hear an answer to: mum always served steamed pudding with a "hard sauce" at New Years, which seemed like an obvious and unnecessary name - but here I've seen steamed pudding with a "soft sauce" and now I understand! Many random thanks!

This looks really interesting and I might have to try it. On tying the string around the bowl, you won't need two sets of hands if you wrap the string twice on the first knot and pull it tight ... it will stay put until you wrap the second one and tighten it.

I still remember when I was little and my grandma would make me raw egg yolk beaten with sugar as a treat: it was the best thing ever. I'll never shame someone for eating raw egg (besides, I use raw eggs in Tiramisù too).

I'm realizing that just about any dessert is termed "pudding" in Britain! I love it! I intend to make one of these, as I don't know of any proper analog here in the States. I've never made a steamed dessert cake, that's for sure.

Mr Shrimp does love the wobble! I noticed Eva curled up next to the stove. Doesn’t she like steamed banana pudding? Thanks for the explanations, I’m in the US and wonder about things. Corn flour = corn starch, never was certain of that. Curious what Babatounde and family will do with this? Maybe another trip to the market, I’m fascinated by that. 😀

I eat raw egg all the time while I'm baking. ^w^ The best mixture of all time is butter, sugar, vanilla, and egg, all creamed together. 👌
