Hot Cross Saffron Buns - Happy Easter!

Hot Cross Buns are a traditional Easter treat here in the UK. Today, I'm making them in a way that also incorporates some elements of a Cornish Saffron bun.

Ingredients:
For the dough:
450g plain flour
7g (about 1 teaspoon) sachet of fast action bread yeast
50g soft brown sugar (you can use white sugar if you can't find brown)
150g dried fruit (raisins, sultanas, currants, candied citrus peel - omit the peel if you don't like it - just use more raisins or some other dried fruit)
2 tablespoons clotted cream (use creme fraiche, or high fat cream cheese or anything rich and creamy)
1 teaspoon ground mixed spice (nutmeg, cinnamon, cloves, ginger)
1 egg
50g butter, melted
250ml whole milk
Saffron (a generous pinch)
For the crosses
Lemon zest, finely chopped
100g plain flour
water
For the glaze
Lemon juice
about 5 heaped teaspoons of white sugar
Infuse the saffron in the milk, warming it in a pan. Leave to cool to body temperature
Mix all of the other dough ingredients in a bowl, add the saffron infused milk; mix thoroughly, then cover and leave for half an hour
Turn out the dough and knead it for a minute or two, then return it to the bowl, cover and leave until it has doubled in size
Knead the dough again to knock out some of the air, then divide it into 12 pieces.
Form each piece into a ball and place them on an oiled tray - leave a little space between them
Cover with oiled plastic film and leave until they have doubled in size and are touching each other. Preheat the oven to 200C
For the crosses, mix the lemon zest and flour in a bowl, and add just enough water to form a very thick batter - put this in a plastic bag, cut a tiny piece off the corner of the bag and pipe lines of this batter across the buns all at once - forming crosses on each one. Do this immediately before placing in the oven.
leave to bake for 20 minutes.
Mix the lemon juice and sugar, stir until it's all dissolved. Brush this over the buns as soon as they come out of the oven - while they are still piping hot.

Just one Iranian tip for saffron: always grind it by Mortar and pestle with some sugar cube. in this way you can extract all essence of it. Happy Easter.

Happy Easter Mike, When it comes to covering the hot Cross buns with cling film to prove you mentioned you haven’t found a better alternative. I recently made some bread And used an old breakfast cereal plastic bag to cover my dough and help my bread prove. It worked perfectly as you can place the whole bowl or baking tray inside the bag! I remember you telling us how useful and versatile these plastic bags could be as they were so strong in a previous video, and I would definitely recommend using one to you in the future If you ever wanted a cling film substitute.

Makes perfect sense to me. Use that cereal bag☺😊 I work in a bakery and a similar material, commercial, reusable plastic sheeting is placed over entire racks of buns for proving. And the cereal bag would be easy to clean for reuse rather than plasticwrap which sticks together in a mess.

@@AtomicShrimp most of the saffron they sell here in the UK is bad quality and doesn't have the full saffron stigma just part of it and is broken. My mom imports and sells saffron in the UK here is her website finestsaffron1.com you can get the best quality saffron from Iran. Feel free to check it out I made her website myself!

Goodness, those are the world's most expensive hot cross buns! That is a huge load of saffron! I bet they were delicious, but this is definitely a recipe to save for a special occasion. Good on you for experimenting so boldly!

Hello Mr. Shrimp! Baker here, yes it's tough to keep rising buns covered in a home setting. I've found the best ways for me have been to have dedicated plastic that you use over and over for buns (such as opening up one of the plastic cereal bags you save), or alternately I have had good success with having a large reusable plastic tub that is clear and rectangular and I balance over my buns on the tray edges and that works quite well. I live in a very dry area, and both methods work fine to keep moisture on the rising buns.

I've got similar feeling about using cling film. I find that if I use the highest quality/premium product I can, I can re-use the same sheet throughout a particular cook/bake to get the most of it: cover the bowl for first proofing, cover the tray for second proofing, cover/wrap leftover buns, etc. Relatedly for used, cleaned zipper bags, I keep them stacked, rolled-up, and held in a section of old paper towel tube slit down the length. Also do the same for used/cleaned vacuum sealer bags. Keeps things tidy in the drawer of bags/foil/film.

Lots of spice mixes would probably sub-in just fine for "mixed spice." Not sure if it's a UK vs. US thing, but in 'Merica we have a couple of mixes usually sold as "apple pie spice" (cinnamon, nutmeg, allspice) and "pumpkin pie spice" (cinnamon, ginger, nutmeg, allspice). Whole/ground cloves usually stand alone, though I do like the flavor and tend to add clove to many things calling for that sort of warm spice profile.

@@Hailey_piggie I've never thought it matters which way one does it, so just do whichever is easiest for you. Though I do think that because cream is usually thicker than jam makes it harder to spread over the top of jam if you put the jam first. Unless you leave the cream out of the fridge for a while. My philosophy is that it all goes down the same hole 😂

Made hot cross buns with a Tangzhong twist, a homemade approximation of mixed spice, and rum soaked raisins. Turned out great and the tangzhong gives such softness.

You mentioned making your own yeast . Will you remember to do a video about that please. My Cornish aunts used to make their own clotted cream and it was simply milk straight from the house cow, poured into a shallow metal pan and left on the range for a long time. The resulting cream was wonderful with homemade "splits" and was never cultured.Maybe the commercial stuff has to be treated to extend the shelf life.

Yet another great culinary video experience. Nice fusion kitchen, while hot cross buns are completely new to me. I've never seen them in germany. I've got a little note, next time you bake something in the oven you could mention that turning oven tray by 180° will probably get you much better results, as I've seen you've done that after adding the crosses. I use baking parchment or waxed paper covered by a tea towel to rest and rise all my dough and pastry. The parchment or waxed paper can be reused many times. If the dough needs a little humidity, I put a small cup or bowl under the towel. This method is a bit easier on the environment than plastic wrap. Also, you can make a piping cone out of parchment or waxed paper instead of cutting up a plastic bag.

Reminds me of Lussekatter, saffron buns eaten in Sweden and Norway in the winter months. Usually no raisins in the dough, usually two of them are added in just before baking them.
