I smoked a whole hog on the Lone Star Grillz Pellet Smoker and it was fantastic! I’ve got to admit, I was super nervous about it because I don’t have any experience with smoking a whole pig - there were so many decisions to make like whether to cook it right side up (the racing style) or opened up on its back. I ultimately decided to smoke the suckling pig upside down so that I could open it up and expose more of the meat to the seasoning and mop sauce.
There’s not a lot of good information online about smoking a whole suckling pig, so I tried to give you all as much information as possible - like the measurements of the actual pig (so you know if it will fit in your smoker), the cooking times and temperatures, and how I prepped it for the grill.
Overall, this smoked hog was fantastic and the family loved it! Our 36 pound pig fed 25-30 people after pulling all of the meat… and it tasted like the most tender and juicy pulled pork you’ve ever had… though you’ll need to have some barbecue sauce and seasoning on hand for serving it - the mop sauce and seasoning didn’t flavor the meat as much as I thought that it would, even with cooking it upside down.
