I smoked a whole hog on the Lone Star Grillz Pellet Smoker and it was fantastic! I’ve got to admit, I was super nervous about it because I don’t have any experience with smoking a whole pig - there were so many decisions to make like whether to cook it right side up (the racing style) or opened up on its back. I ultimately decided to smoke the suckling pig upside down so that I could open it up and expose more of the meat to the seasoning and mop sauce.
There’s not a lot of good information online about smoking a whole suckling pig, so I tried to give you all as much information as possible - like the measurements of the actual pig (so you know if it will fit in your smoker), the cooking times and temperatures, and how I prepped it for the grill.
Overall, this smoked hog was fantastic and the family loved it! Our 36 pound pig fed 25-30 people after pulling all of the meat… and it tasted like the most tender and juicy pulled pork you’ve ever had… though you’ll need to have some barbecue sauce and seasoning on hand for serving it - the mop sauce and seasoning didn’t flavor the meat as much as I thought that it would, even with cooking it upside down. I normally cook 110-120 pigs. Same way, laid open, no turning over. I've got a dedicated Pig cooker. I pierce the skin several times to let the oils and liquid run out just before I take him up. Admirable job! I remember my first, I was worried I would make a mess. Funny thing, in Eastern NC the Competition cook offs don't let the cooks season the pig at all, I will not even buy a meal at one of these, The BBQ sucks when not pre-seasoned.

Good video guys ! I don't anymore but I used to have a pig roast every year , my friend that lives near you would come to the roast. This was of course when we lived in NEW YORK.. my pigs would be around 150 to 170 pounds it fed about 65 people , I quit doing pig roasts when I retired no extra money. Everyone would take home meat . Awesome roasts. THANK YOU FRANK FROM MONTANA......

Color came out great using the pellet grill and looks perfect. We usually have a boucherie at least 3 times a year but in a Cajun microwave or a dug pit. Nailed it!!

It looks Mahvelous! Never done a domestic whole pig, only feral hog. With the feral, the smaller is better, and they do need injecting ( we used apple juice with pickled jalapeno juice). So much fun to do them, especialy when out at the lake fishing and tapping a keg with a bunch of friends. Everyone joins in and helps with the pulling! Great weekends.

Nice job on that pig Neal! I’ve been on full-size hog cooks in the distant past, but I’ve never attempted a pig on a pellet grill. You may have convinced me I’ve been missing out! Love the look of the sides also-what a feast!

You should! I was supremely impressed by how much moisture it retained...BUT in theory the skin did act as a barrier...I thought it helped actually flavor the meat

Good stuff. On the rib test, I'd suggest adding the Goldee's method, where you smoke the ribs nekkid, then when they're done, you wrap them in foil (probably with lard or tallow, I can't remember) and rest them for an hour before slicing.

Interesting smoke combo. WOW look at that. I've done 15-20lbs picnic shoulders a few times, takes about 14hrs low temp high smoke in a 20" Kamado style. We like apple cider injection with pecan smoke. Never tried whole hog yet, need a bigger cooker. Looks sooo good! Like butter! Man I would do all the dishes just to chew on the legs! Holy $h!t this is beautiful!

I watch your cooking videos all the time. Love em. In this one, I have a little problem in that you keep calling the backstrap the tinder loin. The tinder loin is a small strip of meat in side the ribs toward the hams. The loin is on the back of the spine on the outside. I know you know this, and I'm being too picky. Love your posts. Keep up the good work.

Enjoyed the video Neal. I did a whole hog on my Camp Chef WW36. Did it Racing Style, thought it wouldn't fit by opening it up. I injected it with Meat Church Hog Injection (absolutely wonderful flavor). The only thing I didn't like was the skin was so tough we couldn't eat it. Just wondering how the skin on yours turned out. Keep the videos coming.

If you wanted more smoke on the meat you pulled off. You could make you a boat of foil. Spritz the meat. Put it back on the smoker for a bit with a different smoke setting.

Have you tried not using the wood chips? The LSG pellet grill puts out plenty of smoke at any temperature setting. I believe the chips make more ash to clean out later than anything else.

@PelletsandPits True. I think the chips would help most pellet smokers, but the Lone Star puts out enough smoke on its own. I'm going to try them in my old Z Grill. It has the same type of hollow augar, so I think it will work. The vast majority of people prefer light to medium smoke anyway. Most of the people who want mega-smoke are nose blind from their stick burners.

Great cook ! I just got my lsg I season it and did my first cook smoked burgers green beans jerky and cream cheese all in one day. But did you set the temp with the fireboard or the dial thermometer my smoker hasn't learned yet . Still has that 40 degree difference. Thanks

Love the pit. I've had mine a little over a year. Have you tried not using the chips? That pot will smoke at any temp on pellets alone. I've stopped using the chips. The chips just make a lot more ash, imo

I would love to have a back and forth on this...if you respond can you respond like a brand new comment...its a LOT easier to find... I think i agree...someone said this to me one day and its like it hit me right in the face and didn’t leave.. Why add wood chips...pellets are made of 100% wood...so you are literally burning the same flavor...When I tested the Lone Star vs Traeger in ribs...i did not use chips in the LS because the traeger coiuldnt...i thought it was more an even contest... the results were almost identical...used same pellets as well...
