Looking absolutely beautiful the only other ingredients I add are smoke Turkey, bell peppers,tomato, pimento peppers and golden ray .I also prefer cassava dumplings in my red peas.Tfs,

Lovely hun i just come across this one . Can I suggest normally u can use 2 or more meats i use oxtail + pigs tail or turkey neck, salt beef some people use chicken foot its up to the individual. Plus pimento crush some it heighten the taste you can put tomatoes but personally from my grandmother she just like to use a little ketchup and a teaspoon of sugar. An its best cook it in a deeper pot. But loving ur cooking as always hun.💖

Lol....for me....the way to my heart...please use the above method but include a little stewing beef or with cowhead, oxtails, beef tribe, pig trotters and 1 piece of smoked meat (beef or pork or pig's tripe or turkey or ostrich) for flavour dimension and plenty more escallions with thyme.....Oooh... let me share a secret grate 1 small carrot in the mix....it will take out any bitterness of the peas....this is my mother and Aunt Olive's recipes God Bless their souls. I love this dish anyway you cook it! ~
I am just puzzled how you use such a shallow pot maybe it is how you film it but it looks like a shallow saucepan, for me I would have to use a bigger and deeper pot (nuf liquid) or mine would burn or dry out
Calair Brown , no it’s Jamaican 🇯🇲🇯🇲. As is Jerk (from Boston in the parish of Portland) and Ackee and saltfish (Jamaica’s national dish). Jamaicans use at least two types of meat in stew peas one of which is traditionally pigs tail, unless you don’t eat pork.
I love your method minus the sea salt and all purpose seasoning. The pigtail has a whole lot of salt . Boiling it for 20 mins really doesn’t remove a lot of salt but to each it’s own

When are you gonna get a pot that is appropriate for making soups and stews? I just can't watch you cook in that crowded overflowing pot. Look primitive and I know it's very salty
