青椒 Green peppers-2個
生辣椒 Chili peppers-2支
梅花肉 Pork-150g
砂糖 Sugar-1小匙
清酒 Sake-1大匙
醬油 Soy sauce-1小匙
清酒 Sake-1大匙
味醂 Mirin-1小匙
砂糖 Sugar-1小匙
醬油 Soy sauce-2小匙
蠔油 Oyster sauce-2小匙
蒜泥 Garlic paste-1小匙
薑泥 Ginger paste-1/2小匙
太白粉 Starch-1小匙
水 Water-1小匙
[海苔芽清湯]
海苔芽 Wakame-3g
蔥 Scallion-1支
薑 Ginger-2片
雞蛋 Egg-1個
雞高湯 Chicken stock-300cc
醬油 Soy sauce-1/2小匙
鹽巴&黑胡椒 Salt&Pepper
白芝麻 White sesame
麻油 Sesame oil-1/2小匙
Preparation
(1) 150g of sliced pork, cut into thin stripes
(2) Marinade: 1 tsp of sugar, 1 tbsp of sake, 2 tsp of soy sauce
(3) Marinate for 15 minutes
(4) 2 green peppers, remove the seeds
(5) Cut green peppers into stripes
(6) 2 chili peppers, slice each chili pepper into half horizontally and remove the seeds
(7) Cut chili peppers into thin strips
(8) 2 stalks of scallion
(9) Chop the white part diagonally
(10) Chop the green part into rings
(11) 5g of ginger, chop into thin strips
(12) 3g of dried wakame, add water and soak until softens
Combined sauce
(1) 1 tsp of garlic paste
(2) 1/2 tsp of ginger paste
(3) 1 tbsp of sake
(4) 1 tsp of mirin
(5) 1 tsp of sugar
(6) 2 tsp of soy sauce
(7) 2 tsp of oyster sauce
Other preparation
(1) Mix 1 tbsp of starch and 1 tbsp of water together
(2) Beat 1 egg in another bowl gently
Instruction
Soup
(1) 1 tsp of sesame oil
(2) Put to medium heat
(3) Add ginger, white scallion
(4) Fry until translucent
(5) Add 300cc of chicken stock
(6) Squeeze out excess water in wakame and add it into the pot
(7) 1/2 tsp of soy sauce
(8) Some salt
(9) Drizzle egg liquid in
(10) White sesame
(11) Scallion rings (green part)
Stir-fried pepper & pork
(1) Add 1 tsp of oil
(2) Put to medium high heat
(3) Add green & chili pepper
(4) Salt & pepper to taste
(5) Take them out first
(6) Add a bit of oil
(7) Add pork
(8) Add green & chili pepper back and stir-fry them well
(9) Add combined sauce
(10) Add starch water
