I'm glad that you added "turn off stove" reminder when you were taking the food out of the Wok. I can't be the only person that has forgotten to do that until later. ;-)

Love your recipes! It seams like you use a lot of the same spices/sauces in your recipes. What are the "must have" sauces I should have in my pantry for Chinese cooking

Yes. those are some basic and essential common spices and sauces. I must have white pepper, 5 spices , oyster sauce, hoisin sauce, light and dark soy sauce, szechuan chili bean sauce to name a few. thanks for asking.

chef, not that i wouldn't love scallops, but could i substitute a firm white fish, such as cod, for the scallops? i know it wouldn't have the sweetness, but it is such a nice recipe that the ingredients look like they might take other fish or seafood...squid maybe? it is a wonderfully colorful and healthy looking recipe.

Oh yum! What do you suggest as a substitute for shrimp paste, as I don't live close to an Asian grocery store? LOL when my kids were little, they figured out how to use chop sticks in a couple of minutes, but I never got the hang of them.

use oyster sauce instead. Wow, you kid knows how to use chop stick. that is amazing. Go to chinese restaurant and have dinner. and watch other dinners that will be amazed how good your kids with chop stick. Thanks for watching.

Looks delicious! I have only eaten scallops one time. I cooked them in broiler. They didn't taste that great. I probably over cooked them

Thank you for another great recipe! Is shrimp paste essential? I feel like it's one of those ingredients that only appear in a few recipes. If I buy a jar I may never use it up before it expires..

Thanks. shrimps paste gives unique asian's seafood taste. Actually you can use that for other veggie stir fry. almost any green veggie. thanks for asking.

But there are also some unique seafood in your country that we don't have here, example swimming crab ( alimasag ) and dark green giant rock crab ( alimango ). Thanks for watching.

How big are your scallops? Do you know the count?

those are about 3/4 to one inch in diameter. they are sold by the pound. I didn't see the count number. thanks for asking and thanks for watching.

I made the pork belly with bell peppers everyone loved it. But it's better not to marinate with the meat. We find the flavor is a lot tastier cooking the pork belly first, than poor in the sauce.

Another yummy Cantonese dish! I love scallops too but they're so so expensive... Never thought of using shrimp paste with scallops (my mom always use it with minced meat or steamed pork belly). I love its taste but when the shrimp paste is being cooked the smell is really strong! (^_^;)

I agee. have to tried DURIAN fruit? she said the same thing. I can't stand the odor. She suggested pinch your nose & take a small bite. --WOW--- she was right again, LOL....

+HAPPY WOK Durian happens to be one of my most favourite fruit! I hated it when dad bought one back home when I was a kid, but when I took the first bite I couldn't believe how buttery & sweet it is and got hooked ever since! XD

You will, I would suggest start learning my style of cooking, by doing the simple basic one first. Then the intermediate one and finally those complicated with lot of ingredients and steps. That's how i did, learning from my Dad who was a chef cook in a chinese restaurant, when i was teen. thanks for watching.

I got them from large asian supermarket. Yes, they are so huge, that attracted me to it, But the price, almost prevented mt from getting some.
