A tutorial from start to finish for beginners on how to grow oyster mushrooms on pasteurized straw using the old school "Bucket Tek". In this demo, I'm using a hot water cooler pasteurization technique to prepare the straw for colonization. While there are many ways to pasteurize straw, the cooler method is highly effective and is one of the simplest methods for beginning cultivators in my opinion. You can use any number of plastic containers or bags as cropping containers using this method, but buckets are always a popular choice.
NOTE: If you don't have a way to shred your straw, you can often find pre-shredded straw at farm stores that is sold as animal bedding.

The garbage can (or larger plastic container) incubation method I show in the video works great, but there are other options. If you think you're going to do a lot of buckets, it's worth picking up a dedicated can in my opinion. If you're just looking to dabble however, probably the easiest way would be to loosely wrap it with a garbage bag. Just make sure not to seal it on top so it gets some air and you can peek in and mist.

@@nubletten By dedicated can I just mean a clean plastic garbage can you only use for incubating large bags and buckets. If you're just starting out these straw grows are nice but I highly suggest you lean my pasteurized hardwood fuel pellet technique as well as you can grow almost any mushroom on that method. I use a large black plastic bag loose and small opening at the top. Once a day I mist the inside of the bag..it works great.

Good Informative video. Goes over lots of important info to get this bucket and outdoors going well. Loved the tip of twice(2x) amount of dry to fill container once pasteurized. I've got 2x buckets-Pearl and King Blue, several big bags(20L)-oysters and some regular bags of Wood Ear, Oysters and even testing a Shiitake in this spot, out in my garage. So I'll likely add a mister and fan as conditions change. Maybe tarp it in... Hot and dry will arrive sometime, so it's just playing to sneak in a few extra grows. Half of them are on cardboard collected during the winter, hand ripped into chunks and pasteurized. Oat spawn, but I might be too stingy compared to what you sensibly say about amount to use, by at least 50%, which has definitely left longer (prone to drying) colonization time for the low nutritive substrate (no bran or SoyHulls, forgot gypsum); compared specifically to MY regular temp/humidity and added nutrient sub. Really helps to have all this info, Thanks!

I've found that a big steel pot an medium-low on my stove top holds temps between 166 and 178F while uncovered. Just throw your straw into a cheesecloth bag and throw it in the pot. Home Depot delivers 80lb bails of hay for $35. Super cost effective.

Good tip, thank you. I'm wondering though, do you grow oysters on hay or is it straw. The reason I ask is I've always heard that hay is too nutrient rich for pasteurization, hence everyone using straw which is only stem material.

Thanks for the garbage can idea. I was using 5 gallon buckets to grow trunpet mushrooms. But once i get my grow down i think ill just upgrade to full garbage can 😅

Better off sticking with buckets or long column bags. You don't want to get the diameter much bigger than 12 inches because air will not be able to get to the center of your block. It will go anaerobic and contaminate.

When I did this, I just boiled the straw for 5 or 10 minutes or so in a potato sack in a 7 or 8 gallon pot. Then with hook, just pull the sack out and hang it. It drains really well this way, and when it's cool enough to handle you can wring it out, & then it doesn't require much further drying on the table. Of course you need an 8 gallon pot, and a burner that can handle it, but you can process multiple buckets worth kinda quickly this way with no need to muck up any coolers.

Have you ever tried wood chips? I’m testing fresh wood chips inoculated right out of the wood chip machine (no additional water), and looks like it gets colonized pretty well by the oyster mycelium. One advantage I see is that it’s pretty dense, so it might lead to an interesting yield…

Cool experiment, let me know how it works out. I've only used chips in outdoor garden beds. One hang up might be if the wood you are chipping is below optimum moisture content to begin with. You may have better results soaking the chips for a bit and then putting holes in the bottom of the bucket to drain excess moisture. Or, it may work great just how you're doing it. Please share your results 👍

@@RenegadeMushrooms I’ve done my first tests with soaked chips using the usual pasteurization method and it worked, but I’ve found it tends to keep a lot of moisture in, especially when the mycelium starts to kick in and somehow unlock some moisture in the bag. Oysters seem to get on with it, but I also tried Lion’s mane and it seems a bit too wet. It’s in the fruiting room right now, so I’ll update you when I have more!

I have a Wagner wallpaper steamer and was curious, couldn't you use the steamer in conjunction with a 5 gallon bucket to create a pasturation process?

Interesting idea. It's possible, but the key is to hold the temp between 180 and 160 F for 1 - 1.5 hours. Only thing to do is get a thermometer and give it a try. You would have to pre-hydrate the straw probably.

You will save time and mess by using an onion sack for pasteurisation and and if you drill small holes in the bottom of the bucket, it will drain the excess moisture. No need spreading it out on a table and using a fan (adding costs), just hang up the onion sack until it stops dripping, add to the bucket in layers with spawn.

Good tips, sounds like you have your process down. The table is easy to just spray down with the hose and makes it easy to evenly distribute the spawn.

Once the straw leaves the cooler and comes in contact with the table and a flan blowing within a garage, how does this not introduce contaminants resulting in loads of mold?

Because the substrate is pasteurized you don't need to worry much about airborne contams, just try to be relatively clean with your surfaces. The pasteurization process weakens competitors sufficiently to allow your mycelium to capture the substrate before weed fungi and bacteria can take over. Straw is a relatively low-nutrient substrate so sterilization is not necessary, pasteurization works great.

thank you for this new informative video. I would like to ask you how often you need to refill with water your ultrasonic humidifier an if it happens to you as well that on the floor of your fructification chamber you get quite a lot of water condensation (to be regularly cleaned).

I refill about every 3 days, and I just wipe up any condensation on the table with a towel once a day or so, sometimes there isn't much. If you're worried about dripping, just set the shelves in a shallow plastic tray or storage tote

@@RenegadeMushrooms thank you again for your time and patience. Another question: I was wondering if I can prolong the colonization period up to three-four months, waiting for less hot temperature before opening the buckets and exposing my oak logs to cooler open air.

@@andreagatti4830 Really the only way to prolong colonization is to keep them in very cool (refrigerator) temperatures. This will slow most strains down drastically, but you need to be careful because refrigerator temps will kill some tropical species. It is better to time your inoculations with conducive seasonal temperatures.

@@andreagatti4830 Are you using actual wood logs in buckets? If so, the wood should have adequate moisture as long as it is relatively freshly cut.

Would a wood frame using galvanized hardware cloth to drain the straw contaminate the straw in any way from the zinc used for galvanization? Your videos are awesome by the way. I’m just starting out and I have learned the most from your channel….. Thanks

Great, thank you for watching and I'm glad you're enjoying the channel. I'm honestly sure if any chemicals would leach from the galvanized into the substrate. I have seen a lot of people using wire mesh baskets that I assume are galvanized for this purpose and it seems to work for them. Some people also use large burlap bags with this cooler method.

I know some people make water agar specifically because the lack of nutrients helps in cleaning up cultures. Really any nutrient source can be added to enhance growth as long as it is easily digestible by the mycelium.

I have, but a higher grain to straw ratio increases your yields. As you expand your straw and reduce the percentage of grain, your yields drop off.

Grain will fruit if you let it go long enough, but oysters don't fruit well from straight grain so you'll get a bunch of weird spindly little mushrooms. Nutritionally, grain is not a great fruiting substrate for most species, it's best used as a carrier for your final fruiting substrate, sawdust, straw, manure, etc.

Are 2nd Flushes worth it or even going to happen with this low nutrient bucket tek, as is? Just gauging, not judging. ;) May be possible but require adding nutrients and a different sterilization plan? Clarifying. These are some of my most 'free range' grows and wondering if '1 and done' is best approach, especially when exposed to all the nasties floating around in this world.

When I was growing for restaurants many moons ago, I used to do quite a few straw columns and jumbo bags. In my opinion, 2nd flush is definitely worth it, but not the 3rd. I would only keep them around for three flushes if I was just doing them for fun, or for personal use.

Great video! Is there any reason that I couldn't use a spent oyster mushroom grow kit? I've got three fruitings out of it already. I haven't grown mushrooms indoors in a few years and wanted to start back up again and I thought it would be a perfect opportunity since I already have the inoculated spawn. I already have a couple big bags of the pre-processed straw leftover from a Wine cap bed outside lol. Any thoughts? Thanks!

Yeah send it 👍 but you want to use a high ratio of spawn (used block material) to straw. Reason is the mycelium in your block will be weakened after producing several flushes of mushrooms.

In general yes, it is best to avoid substrate treated with herbicides if possible.

Greetings from sunny SW Florida. Can you slide the bucket into another bucket instead of a garbage can? Probably not the mycelium won't be able to breathe... Do you have alternative methods please?

If you think you're going to do a lot of buckets, it's worth picking up a dedicated can in my opinion. If you're just looking to dabble however, probably the easiest way would be to loosely wrap it with a garbage bag. Just make sure not to seal it on top so it gets some air and you can peek in and mist. If you did a bucket inside another bucket, it would probably work, but there would be a definite risk of stunting or damaging your pins if you didn't catch them right away.

You can use any straw, but wheat seems to work the best for me. I don't drill holes in the bottom because I let my straw drain and air dry on the table so the drain holes aren't necessary. Drain holes work well if you want to just throw your substrate in there wet, but be aware that your mushrooms will also likely fruit out of those holes if you don't cover them during the fruiting cycle.

No it's made from synthetic polyester fibers so it won't grow mold. They sell it in craft stores in bags for stuffing pillows and stuffed animals.

Disinfect thoroughly and dry everything out thoroughly. Not only can certain species eat your mushrooms, but they'll feed on bacteria and yeasts, so remove their food by disinfection. Then get everything bone dry in there. Springtails have gills, believe it or not, and need high humidity to breathe. Use a dehumidifier and a fan in there. You wanna give it enough time to dry out the nooks and crannies where the survivors and eggs are hiding. If the grow room is a room in your house, then you most likely introduced them. They can come in on new houseplants, or on your clothes if you've been gardening or digging in compost, etc. If the straw you buy is damp, they'll be in that too. So while it's pasteurizing, go take a shower and put on fresh clothes before handling the substrate or going in the grow room.

If you want to grow in warm temperatures, you just need to select warm temperature strains of oyster to grow. There are lots out there. It's still best to colonize your blocks indoors at room temperature though if possible, as warm temps couple with the metabolic heat build-up from the mycelium can cause contam issues during colonization. A warm strain will be more tolerant of high temps once they enter the fruiting cycle.

I’m not sure plywood soaking the straw is a great idea since ply wood is glued together and not water tight wood , glue contamination could mess with the straw , just saying, something to think about , my way of thinking is glues can’t be good being chemicals especially if your growing food to eat.

I hear ya, but I've been using that same piece of plywood for 20 years as a straw holder downer and fish cutting board so if it's going to kill me, it probably would have by now. I wouldn't use treated plywood though.
