These healthy cupcakes are from Forks Over Knives. They use almond butter instead of oil and maple syrup instead of sugar. Be sure and stick a toothpick in them to make sure they are cooked thoroughly before removing them from the oven. Top with fresh strawberries or raspberries for more fruit flavor! The cupcakes tasted sweeter the next day after being in the refrigerator over night.
