I made this recipe after watching the vid, I love the cream over the top which I spread 2/3 of it on the cake and the rest was meticulously fingered to my mouth. My cake came out cooked but a little too dense not fluffy, taste good, well balanced. Tested one piece and figured I had to let it set in the refrigerator to bring out more flavor. I like it and I will make it again to be lighter. I’m in for suggestions. Thank you for sharing
Thanks for making the cake Albert and for your feedback! If you make it again, you could try adding a little more plant milk and not cooking it quite as long to see if it is softer. It doesn't have any oil, so it's not going to be super moist. So happy you enjoyed the frosting, it's yummy!
@@kathleenkastner not really sensitive, I just don’t like the taste, lol. Plus, it’s a little too expensive for me. Around here dates have gone through the roof.
@@tracyherwig4733 thank you for the explanation. I understand. Dates are expensive. We get them at Costco. You could possibly use maple syrup but I don't know how much to use and how it will turn out. You might be better off looking for a vegan pumpkin pie square recipe on the internet that uses sugar instead. There are a lot of pumpkin pie cookie recipes online also. Let me know if you find one you like!🥰
I’m vegan for the animals but I always prefer to cook wfpb. This recipe looks delicious and I love the ingredients. I’ll definitely make it because carrot cake is my favourite dessert ( other than fruit). 💚🙏🏻
Thanks for the question. I have not had a problem with sticking to the glass pan. You could put a little oil on a paper towel and toilet before baking. 🙏💖
i went vegan in 2019 due to a stroke at 53. my daughter and wife are already vegan. i was on keto prior to going vegan, so lots of meat. I've always been, staying away from meds, trying to do things naturally. so when I get seasonal allergy's I've always used local honey to combat in tea. now since I went vegan in 2019 I've been told honey isn't vegan. I know you said you use grey poupon honey mustard in your potato salad. Actually I have 2 jars of local honey that I haven't eaten since going vegan. actually once I felt I needed it and justified my using buy saying I already bought it so its better not to waste. so I do hold on to the honey. What are your thoughts on using honey while being vegan. there is no judging here, just curious.
Hi Mike. Thanks for your comment. It great you've gone vegan since having a stroke. I hope you're feeling better. I stopped using the mustard and condiments with vinegar and citric acid, after following the Medical Medium Cleanse to Heal protocols. He recommends raw honey for medicinal purposes. For recipes, I will use agave or maple syrup instead of honey. I have heard it helps seasonal allergies, so do what feels right to you. 🙏
I made the cake and the frosting it is super delicious. Is it supposed to be really moist? If it were any other cake I would think it's not done. I cooked it an extra 10 minutes and it still seems too moist. I'm just going to eat it this way. It's still really tasty.
I'm happy you liked the cake Beth! I haven't noticed it being super moist. You could try using one cup of plant milk instead of 1 and 1/2 cup and see if that helps, along with using the full amount of oats. Thanks for your feedback! 🙏💖

I looked at the link that went to the recipe and I only see it calling for 1/2 cup of plant milk (no date water) but the video you did plant milk and the date liquid at 1/2 cup each. Which should I do?
Thank you Amanda for asking. I would follow the directions in the recipe link. I know I put the date water in the frosting. I would just do the plant milk in the cake part. I hope you enjoy the squares! 🥰
Actually, the recipe on Forks over Knives "does" say to use the 1/2 cup of the soak water. Per recipe: "Place flour and pumpkin pie spice in a large bowl. Place soaked dates, the date soak water (see “texture” note), vanilla, and plant milk in a blender. Purée until smooth (1 to 2 minutes). Pour the mixture into the bowl of flour and spices, and also add the pumpkin, and mix with a wooden spoon until all the dry ingredients are incorporated". Then under the texture notes, she adds - "for a firmer texture without refrigerating - don't use the water." Anyhow - I'm making these tonight.
