Ingredients:
2 cups fresh strawberries, diced
2 cups rhubarb, diced
1 tbsp lemon zest
Juice of 1 lemon
1 tsp cornstarch
1 1/2 cups all-purpose flour
1 1/2 cup rolled oats
1/2 cup packed light brown sugar
1 tsp baking powder
1/2 tsp salt
1 cup (2 sticks) unsalted butter, melted
1 large egg
1 tsp vanilla extract
Directions:
Prepare the Filling:
1. In a mixing bowl, combine the diced strawberries and rhubarb with
lemon zest, lemon juice, and cornstarch. Mix well to ensure the fruits
are evenly coated; set aside to marinate.
Mix Dry Ingredients:
2. In a large bowl, whisk together flour, oats, granulated sugar, brown
sugar, baking powder, and salt.
Make the Crumble:
3. To the dry ingredients, add melted butter, egg, and vanilla extract. Stir
until the mixture becomes crumbly.
Assemble the Bars:
4. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
5. Press half of the crumble mixture into the bottom of the pan to create a
firm base.
6. Evenly spread the strawberry-rhubarb mixture over the crumb base. 7. Sprinkle the remaining crumble mixture on top, covering the fruit layer.
Bake the Bars:
7. Bake for 35-40 minutes, or until the crumble topping is golden brown
and the filling is bubbling.
Cool and Serve:
8. Allow the bars to cool completely in the pan before slicing into squares
for easier handling and a cleaner cut
