A tart entremet (cake) is a pie topped with a mousse, or light ganache or other fruits mixtures according to the theme and season. Creativity is endless here. For instance, the soft strawberry jelly could have been subbed for rhubarb. The tart entremets is a great alternative for those who want more than a classic tart or pie.

So glad to see that you're doing things like pastry fundamentals. I remember when I boght Cedric Grolets cookbook on fruit based deserts. I felt I was in over my head. But your videos helped me to visualize the progress and understand the recipies better. And I also gotta admit that I like some of your interpretations better than Cedrics, you're a real master!

I have only one question and thats why keep the green stuff on the strawberry when you put those on the tart, it doesnt taste pleasant so why bother?
