Hey Bruno, when it comes to the finished pie, is there any difference between making the crust the way you did vs. combining cold butter with flour until crumbs form and then adding the rest of the ingredients?

Made this and it turned out perfect following your recipe. Mind you i had no whisk or thermometer but if you have good instincts those are redundant. I forgot to prick the crust base but it didnt seem to matter because it didn't puff up anyway
