Yes, we do it regularly for the past year in my family (I live in Greece) and it's delicious. You could if you want add quinoa and some kind of wild rice ;)
I add ground veal. No mint just parsley. I also add Greek olive oil in the baking dish. Just drizzle over each veggie, and also top with bread crumbs. This helps protect the veggies from burning.
Love the recipes. But if you could add your voiceover as a separate recording it would be even better. In some areas, ur voice seemed to go far away and was more distracted due to that and couldn’t focus much on the recipe. But over all, amazing work.
Looking for a Greek Chef to follow. My family are from Cypress, but my Yaya & Papoo has passed. My Yaya has left her secrete recipe for Grape Leaves (Dolmades) with my wife which cooks them once a year on my birthday because it takes 4 hours to roll them her self. Can you do a video on the real Dolmades with the meat(s?) to see what you do? A variety of wild/unprocessed rice are extremely healthy. Rice is gluten free. Trahana contains (wheat) flour and milk/dairy. I would say rice is healthier. But if you like trahana and have no problems, I would suggest to use it in the traditional trahana soup, not in gemista. I wouldn't be that good.
