Hello, this is siZning.
Today, I made 'Tigre', a baked confection that resembles a tiger pattern.
It is made with the same ingredients and method as the 'Financier', but with the chocolate in the dough and almond powder with a slightly higher specific gravity, it is a heavier and more chewy baked cookie than the 'Financier'.
It's Crispy on the outside & moist on the inside when freshly baked,

🔸 Storage
The finished 'Tigre' can be sealed and stored at room temperature for 3-4 days.
For long-term storage, freezer is recommended. (About 2 weeks)
🧡 Ingredients (for 8-9 pieces)
🔸 'Tigre' Dough
100g unsalted butter
85 g egg whites
65g sugar
15 g honey
A little salt
3g vanilla extract
15g cake flour
15g Allpurpose Flour
80g Almond powder
40g dark chocolate
🔸 Ganache
30g dark chocolate
30g fresh cream
