I wanted to share my secret recipes which are both easy to make and delicious.

Vegan Japchae
Ingredients
Korean sweet potato starch noodles(dangmyeon) 200g
Red paprika 1/2
Yellow paprika 1/2
Onion 1/2
Spinach 100g
Oyster mushroom 100g
Shiitake mushroom 100g
Garlic 1/2 Tsp
Leek(or green onion) 1 Tsp
Salt to taste
Soy sauce 4~5 Tblsp
Sesame oil 1 Tblsp
Ground black pepper to taste
Toasted sesame seeds 1 Tsp
Instruction
1. Bring 2 liters of water to a boil to cook the noodles
2. Thinly slice paprika and onion. Take the root part of oyster mushrooms and shred them in similar size as paprika and onion. Slice shiitake mushrooms
3. Put the noodles in a boiling hot water and cook for 3 minutes. Turn off the heat and let the noodles sit for 5minutes in a pot
4. Heat the pan and add 1 teaspoon of vegetable oil. Stir-fry the vegetables separately with a small pinch of salt. Put each vegetables in a plate when they’re cooked
5. Drain the noodles from hot water and season with 1 tablespoon of soy sauce and sesame oil
6. Put 1 and 1/2 tablespoon of vegetable oil to the pan. Add minced garlic and leek to the pan and flavor the oil with them.
7. Add cooked noodles to the pan and put the vegetables as well. Combine noodles with vegetables. Season them with 5 tablespoons of soy sauce, sesame oil and ground black pepper
8. Serve
