To Brine the Chicken:
1 big chicken
1.5 liter of water
2 tablespoons of salt
1.5 tablespoons of sugar
1 teaspoon of cumin
5 gr rosemary
1 lemon
For the Peri Peri Sauce:
4 chili peppers
2 capia peppers
1 onion
5 cloves of garlic
1.5 lemon
3/4 glasses vinegar (150ml)
3/4 glasses oil (150ml)
5gr teaspoon thyme
1 teaspoon cayenne pepper
5 gr pepper
1 teaspoon salt
2 teaspoons sugar
For the Fried Potatoes:
1.5 kg potatoes
half a bunch of parsley
1 clove of garlic
5 gr salt
To Fry Them:
1 liter of frying oil
ForEasy Pickles:
4 glasses hot water (800ml)
1/2 glass vinegar (100ml)
1 tablespoon sugar
1 teaspoon salt
1 teaspoon cilantro
5 gr mustard seeds
5 gr pepper
3 carrots
1/2 of a red cabbage
1 onion
