I'm sharing how I made TWO super cheap meals my family loved that are both vegetarian AND very friendly on the weight watchers plan.
Super Cheap Healthy Meals Playlist: • Playlist
Grocery list:
1 lb dry black beans, 1lb brown rice, 1 jalapeño, 1 red onion, 2 roma tomatoes, 1 garlic, 1 bunch cilantro, 2 limes, 1 can tomatoes, 1 pkg corn tortillas, 12oz bag frozen corn, 16oz jar alfredo sauce, 1lb whole wheat penne, 5.3 oz container PLAIN greek yogurt, taco seasoning, ranch seasoning
Chuy's Jalapeno Dip: thingsicantsay....
My version:
2/3 C Plain greek yogurt
1-2tbsp ranch seasoning
3 tbsp milk
1/2 jalapeno, finely chopped
1 clove garlic, pressed
juice from half a lime
salt & pepper to taste
Corn Salsa inspired by: cookathomemom....
Cilantro Lime Rice inspired by: zestfulkitchen...
Black Bean Alfredo inspired by this recipe: www.simplejoy....

Married to a Mexican for 17 years now. They use cilantro alot. I love it. They also eat cactus, I love that to. Lol. When I go visit my mother in law in Mexico, I know I want be hungry because I love authentic Mexican food. I have learned to cook Mexican food through her, my husband, and in laws and friends around us.

Love ❤️ plant based options. I have 10 lbs each split peas, garbanzo, lentils, quinoa, lentil pasta for just in case. I just spend extra $10 per trip that goes into emergency rations.

I know the is a really old video but as a non American single person I love that all the produce is loose and not bagged up n ridiculous quantities that are just going to end up in the food waste bin, that is one thing that is so annoying about shopping/cooking for one.

I am starting to play around with more meatless meals. Not ready to go totally plant-based (we love dairy), but it’s good to know e can get along fine without meat for a few meals if we need to.

I make a pasta very much like what you showed but it has no tomatoes, we have an allergy, we use a can of pumpkin instead. I call it spicy pumpkin pasta and everyone loves it.

I have been very intrigued by your cooking and shopping methods. I do love cilantro. I have issues with corn, so I must substitute both corn and the tortillas. Otherwise looks tasty. Also love the taste of jalapeno, not the heat. Fortunately, I know how to take out the heat. Thank you for all the tips.

Cilantro is an acquired taste. Plain parsley can be substituted for those who dislike cilantro. Luv your videos.

I have really tried to like cilantro but I don't. It tastes like soap. I feel the same way about Halo Top-I tried to like it but it's terrible!

These people have a variation in a group of olfactory-receptor genes that allows them to strongly perceive the soapy-flavored aldehydes in cilantro leaves." If you soak the beans in fresh water for around 12 hours, It will take only 2-3 hours to cook.

Honestly, I just search on pinterest and then I adapt it according to my taste. I can tell you that the ranch seasoning requires powdered buttermilk, which you can find in the baking section with the other powdered milks.

Wow! The cheapest canned black beans here is $0.72 a can! Also, I’ve been making my beans in my Instant Pot. I loooovvvee cilantro! I have some meal prep containers and it seems like the lids only go on one way. If I have trouble getting them on, I turn the lid around. Have you tried that?

Hi, Beth! Yes, these lids only go on one way because of the compartments. They aren't super secure, but I'll still find ways to use them. :)

I Love cilantro. I would at least garnish almost every dish with it. Unfortubately, I am the obly one in my house who feels that way. My FIL would rather pull his eyelids off than eat cilantro.

All looks so good. Run you covers under hot hot water.....it loosens up a bit and easier to put on containers

Thanks, Rosemary, I will try that! I think the issue with these though is they don’t fasten. There’s nothing for them to fasten to, so they lift easily. Nothing was “clicking” to tell me it was sealed. P

Quick question of the black bean alfredo recipe: you didn't say there was alfredo in it but it was in the pot. How much did you use? Was it the rest of the jar from the other recipe? Your inspiration recipe used 14 oz.

I know this is older video but i just wanted to point out Alfredo sauce isn't vegetarian as it has Parmesan cheese which is unfortunately not veggie just wanted to point that out to anybody who is wanting to make this but wants to keep it vegetarian :) really enjoying your channel! you've given me some great meal ideas!
