I am so excited to be officially done with my canning for 2023. My apple pie filling turned out pretty good except it was quite the journey to get to the perfect can of apple pie filling. I was cooking it way too long and was trying to adjust my syrup. It has been a little bit since I’ve canned apple pie filling and so I was a little rusty but after I got started, I remembered all of my steps and the things I did to get the perfect apple pie filling. Even though some of the apple pie filling did turn out a little softer than I’d like I can still combine it with other apples or use it for a different recipes so it’s not a loss
Here is my apple pie filling recipe:
This recipe makes 7 quarts of apple pie filling (which is 14 cups)
12 cups of apples, peeled, cord, and sliced
2 1/2 cups of brown sugar
1 cup of white sugar
2 1/2 cups of water
 2 tablespoons of apple cider vinegar
1/2 teaspoon of salt
3/4 cup of lemon juice
2 tablespoons of pumpkin pie spice
You’re going to combine all of this together cook it on low until it’s hot, then you can put it into your canning jars and cook in a water bath for 25 minutes, or pressure can at 5 pounds of pressure for 10 minutes. If you’re just using this to make apple pies, you could probably just make the filling let it cool and then put it into freezer bags and freeze flat. Your apples might not stay as nice as if you were to canned them, but that is another way to store the apple pie filling.
Here are the different measurements for syrup types:
Medium syrup is 3/4 cup of sugar 5 cups of water
Light syrup is 2 1/4 cups of sugar to 5 1/2 cups of water
Heavy syrup is 4 1/2 cups of sugar to 4 1/2 cups of water
I will be making an apple pie from scratch, when you make an apple pie from scratch you don’t have to make your syrup. All you need to do is cut your apples if you’ve caught and peel them, put them in a bowl with cinnamon and sugar and let them sit so they make your own juices. Then you pour them into your pie crust and bake. Super easy, but if you’d like to store them a little longer, this is a pie filling you can use.
