Lor Mai Gai is a traditional Cantonese dish, usually eaten as dim sum which is also known as snack. I guess authentic Lor Mai Gai is usually wrapped with lotus leaf but in Singapore, we usually eat it straight out from the plate. In English, this dish is literally known as Glutinous Rice with Chicken or Steamed Sticky Rice with Chicken. The base for Lo mai gai is usually glutinous rice, chicken, Chinese mushrooms, Chinese sausage, scallions and at times even dried shrimp or salted egg. What you add to your Lo Mai Gai is entirely up to you. Isn't that the beauty of homecooking?

Ingredients:
Makes about 6 portions
Marinate for Chicken
----------------
1 piece boneless chicken thigh
6 pieces of mushrooms - halved
18 pieces of Chinese sausage (use half a Chinese sausage then slice into 18 pcs)
1 tablespoon of sesame oil
1 tablespoon of Chinese cooking wine (Shaoxing huatiao wine)
1.5 tablespoons of light soy sauce
1.5 teaspoons tapioca flour or cornflour
2 tablespoons of oyster sauce
1 thumb size ginger - grated (use the juice only)
A few dashes of pepper
Glutinous Rice
--------------
2 cups of glutinous rice - wash & soak overnight or at least 6 hours (use rice cup)
3 cloves of garlic - chopped
5 pieces of shallots - chopped
2 tablespoons of light soy sauce
1 tablespoon of dark soy sauce
1 teaspoon of 5 spice powder
1 tablespoon of concentrated chicken stock
1/2 cup of water
+
1/2 cup of water (this is not a typo - you need to add 1/2 cup first then fry for a while followed by adding another 1/2 cup just before you dish the rice out for steaming.

Malay Malaysian here - I went to Hong Kong in 2018 and immediately, I fell in love with Cantonese/Chinese cuisine. Loh Mai Gai is probably my most favourite dish, made it today but just over white rice. It was divine. I omitted the sausages and substituted the cooking wine with splashes of vinegar. My god, the vinegar rounded up everything from not bad to fantastic as I tasted the dish along the way.

I made this for dinner tonight, it’s delicious! Taste better than the restaurant we frequent for dim sum. We love ginger, I grated it for the juice and also added the rest of the ginger fiber on the grater to the chicken to enhance the flavor. Turned out great, we love it, thoroughly enjoy it!

I love your attention to detail! From how to remove the skin and excess oil from the Chinese sausage to how to place the mushroom in the bowl for better presentation. I just wished I had a UFO sized wok like yours! Amazing dish - one of my childhood favorites dishes so now I don't have to go to Chinatown!! Keep up the amazing videos!

Please do reheat when you want to eat them as they taste best when warm. Steam them for another 10 mins or until hot if you store them in the fridge. Remove and wait for a minute or so before devouring them.

Hi roland 1) 2 cup glutinous rice to a total of 1 cup water (ie using same rice cup)? 2) after stir frying, when u transfer rice to steam, at that point is rice already cooked? Thks

Opps. I’m so sorry Mel. Yes we used the same rice cup to measure water. after stir frying, the rice is not cooked enough. You need to cook the glutinous rice just like how you would with normal rice. Just by stir frying won’t make it. Hope that helps. Happy cooking :-)

Hi, just wondering if the chicken would be overcooked ? since they were cooked for 10 mins initially and then steamed for 15 mins later. Please enlighten me .

While you were assembling the LMG into bowls, you mentioned that these can be kept in the fridge and reheated again. Are these LMG steamed and kept or just assembled and kept?

Opps Sharon, so sorry for our late reply. Yes you can use the grated ginger instead of ginger juice. If you wanna eat them later, you can just assemble them in the bowls first then keep them in the fridge once they have cooled down. When you wanna eat them, just take them out and steam. I have Premium Dark Soy Sauce (特級老抽) at home, are they same as the one you call for in your recipe? Mine seem quite watery like normal soy sauce, and doesn't seem as thick as yours. Are they same?

Hi Judy. Yes please rehydrate them first by soaking them in tap water until they’re soft. Remove them stem ya. Happy cooking!

Will have to try this as Lor Mai Gai is probably my favorite. Whenever I go for dim sum, we always look for this on the menu or as the trollies come round.

How do you suggest we made them in bulk and freeze? When they are in the final stage (in bowls)?

Hihi. You can put them in disposable aluminium foil bowls and cover them up individually with baking paper for freezing.
