vital wheat gluten
apple cider vinegar
soy sauce/liquid aminos
nutritional yeast
garlic, onion powder, paprika, umami seasoning, cinnamon, nutmeg

Tip: So that it doesn't puff up and expand as much, make knots with the seitan and sear it in a pan before you steam it. The knot tying is essential for the fibrous texture as opposed to just cooking lumps.
