I think I would add mushrooms. I love the flavor and it's rich in vitamin D.

I thought the same thing, especially if you have a lot. But would they cook the whole time or be thrown in at the end? Vitamin D is essential to fight virus's including Covid!

@@CynthiaSchoenbauer I would add the mushrooms about the last 20 minutes of cooking. However, if I didn't have time to be really careful, I don't mind them cooked mushy so adding them at any time would be fine with me.

Ohhh I love this~ years ago I was home sick from school with bronchitis, I learned about the secret ingredient in chicken noodle soup. F.Y.I ~ HAL LINDEN, yep BARNEY MILLER told me😉 that GINGER was the secret ingredient. I’ve been putting ginger in my chicken noodle soup ever since. He’s still alive and the same age as my dad.Bless his heart. I hope he knows he made a difference.

Dear Mary. I love your channel. I am from Portugal, born and raised, and we Portuguese love our soup. This is how most households will make their everyday soup. My mom always makes it this way and I also, even though now I have lived in the States for twenty-plus years, and my 4 children all were raised eating this vegetable soup. I still make a pot every week for my husband and I for dinner. I just put a bunch of different veggies, almost always onions, potatoes, carrots and garlic as the base and then I will put a lot of other things as they are available to me like turnips, pumpkin, leeks, broccoli, cauliflower, zucchini, etc, almost always some greens, a bit of turmeric powder, black pepper, and salt, and at the end of cooking a big bunch of italian parsley,. Cover with water and cook, then puree with a hand-held blender. Serve with a good drizzle of olive oil. Sometimes I cut things really small and I will not puree it. Delicious. Thank you for your dedication to your channel. It is a treasure of knowledge. Take care.❤

To me this is ancient alchemy at its finest, and the process of creating a superfood fit for the gods. I would perhaps try another way and dehydrate all the foods and ground them to powders then store in jars. You could mix any concoction you'd like into brews or soups. I actually always add both black peppercorns, bay leaf and whole allspice to all my broths. Chicken and beef too.

I put my veggies in a large mesh vegetable bag when time is up place the bag in a strainer over a bowl. This saves a lot of work. When it is cool you can put contents through the grinder. Wash the bag and use again. Just make sure the bag is cotton!

Hi Mary! Thank you for sharing this wonderful soup recipe! In addition to all the veggies from the recipe, I also added in few skins of peeled beets. As the broth came to a boil, I noticed that it was red. I quickly pulled all the beet skins from the pot as I was afraid that the color of the beets will overpower my broth! At the end, it was a very delicious broth with a slight pink color that I didn't mind.

This is how I make winter vegetable soup. Everything in the pot. Simmer for ages and then eat it all including the liquid. One pot cooking. ❤

Dehydrate the skins and what not and blend to a powder and you have a seasoning to use for foods

I made a vegetable soup last Saturday and another one yesterday, I used one can of corn, a can of French style green beans, mushrooms chopped fine, baby carrots, cut in three segments, chopped pimentos, two plum tomatoes, chopped. Green and red sweet peppers, and a small onion. The city has been dropping off various types of food because of the virus. So I had to use up the sweet peppers, onions as well as the baby carrots I bought. We also received 12 cans of chili with beans, a huge can of pears, 12 cans of salmon, another person dropped off a case of beef with gravy, a case of elbow macaroni, I may cook some to add to the soup. We still have food we received from a church we went to. God bless everyone.

Moat Cottage - Oh Elissa!! I am SO happy you like it!! And it’s light enough to even be enjoyed during your warmer months. And yes...aren’t those flour sack towels a dream!! I tell everyone!! It’s a little more work to wash but so much more economical than always having to buy cheesecloth. And mine have lasted for years. I have to say that in one of your other comments you mentioned tea time. I love that tradition. My Mom is Italian but when she was in England and Ireland, she loved tea time. And then when I visited England, I fell in love with it too!! I also loved how the tea server would call me madam!! So formal and fancy!! And the treats to accompany the tea were delectable!! I am so happy you have that tradition in Australia. A few of the fancy restaurants in the US have tea time but I have never been. But I don’t think they are calling anyone madam. We are so informal here!! LOL!! When my son was a little boy, I would sometimes turn his afternoon snack into more of a tea time “event”. He loved it. And he is still a big tea drinker to this day. I love when anyone asks him if he would like a hot cup of tea...he always says...”Oh yes, please!” And my husband is a tea drinker too. He always drinks iced tea but now enjoys a hot herb “tea” after dinner. He says that women civilize men!! LOL!! Love, Mary ❤️😘❤️

Mary's Nest ah yes, when I mentioned tea time, I was not talking about Tea Time - the drink ritual (which is big here, although fancy coffee ritual in lovely coffee shop is bigger) We call Dinner, Tea. You see Dinner is the big meal of the day, at either lunch time or tea time.... so we call our evening meal ether dinner or tea and traditionally Sunday dinner would be at lunchtime. It is somewhat confusing I guess, but we certainly do serve tea varieties and/or coffee to guests when the visit and if we are expecting them there will be something to accompany, like scones and homemade jams. 😊💕

Greeting from the Caribbean island of Puerto Rico, Thankyou for sharing this recipe,, absolutely love it. Small suggestion I leaned from my grandma,, nylon with Lycra stockings are wonderful for straining vegetable broth and veg juices . Try it.. you will be amazed.

I’m so glad I found you when I recently decided to learn about herbs and herbal remedies! I’ve skipped around so much and I’m a bit of a type A personality, so had to go back to the beginning and watch them in order so I don’t miss out on anything. I’m currently fermenting lemon vinegar and sauerkraut. And I’m drinking herbal teas instead of coffee in the morning. Thank you for imparting your knowledge!

I Love the beef broth, I made it yesterday and it came out so Fantastic. I added cilantro, two different green peppers. I have to try the mineral one tomorrow, than I will do the chicken and fish heads. I need this broth so much for my bones. Thank you very much.

Oh my goodness!! I think you are SO right. Also, I once saw Martha Stewart add a pear to one of her Fall season soups. That might be nice too!! Do you think any other veggies and/or fruits would work well in this broth to make it even more nutritious? Thanks!! Love, Mary

@@MarysNest i think you did a great job with your choices! When I make this, I may throw in kale, parsnip, maybe some tomatoes or peppers too. Oh, and lots of garlic! I've grown to love garlic recently. Thanks Mary 😙

Your inclusion of Kombu is great! It can be cooled and sliced for a Japanese style seaweed salad, dressing of Sesame seed oil, Tamari soy sauce and rice vinegar. Very high in iodine. Just out of curiosity, why do you simmer without a cover?

Thanks for the tip about the kombu - sounds delicious! I simmer without a cover so that I can keep an eye on it and make sure it doesn't boil. I try to be gentle with it. It's a challenge with an electric stove. But you can certainly simmer it with the cover on. Hi Mary, thanks for the fantastic channel, I made this Broth recently I used what I had mostly same as yours worked perfectly. I then pureed the Veges in a bimby ( thermomix) as i don't have a food mill, and it made a fantastic sauce, ( my babes loved it) First batch of Beet Kvass has got the thumbs up from my hubby as well,. Not stopping till I have tried everything once. :)

I would try putting the cooked solids in my single auger juicer. I think that could work better than the food mill at extracting the juice. This was a great video thanks so much.

I just made my broth and had my first cup. The taste sneaks up on me. First I tasted water, then parsley then a little heat from pepper and on my the ginger flavor lingers. I hope I got a lot of potassium. I've been walking five miles at 3mph with twenty inch legs. And I've been sweating out my nutrients. I guess after I walk I'll drink it so it can get in me and stay awhile until the next day

@@MarysNest To some extent I do, just learning all of this marvelous "stuff". As of right now I have an Elderberry Honey fermentation going on and a cranberry one. It seems I'm the only one that wants to do healthy in my household of 2; hubby and I. I love none broth anything, hubby would rather have Campells in a can. My daughter Isis big fermentation gal, she has a farm. I will be sure to check out your suggestions, thank you and God Bless.

Claire Bacon - Wow!! I am so fascinated with the Elderberry Honey ferment! Does it become slightly alcoholic because of the sweetener? I have always wondered about this with fruit type ferments. 🤗🤗🤗

@@MarysNest Ms Mary I have no clue, lol. As far as I know it does not. I do have some alcohol tincture going with Elderberries and elderberry syrup as well. I enjoyed the Beet Kvass video! I tried sweet potato kvass, but that failed for some reason. Enjoy your day, I'm off to church.♡

What an awesome video,Thankyou Mary, at the end when you used the food mill to grind the remaining veggie scraps what did you use this broth for, could it be dehydrated for later use to use in something?

Hi Didi, so happy you liked the video! I used the broth in place of water for making soups and stews and when cooking rice or other grains. And yes, I definitely think it could be dehydrated. Happy you are on this traditional foods journey with me! Love, Mary ❤️🤗❤️
