If you've got your opponent's back, you'll generally set up the choke on the underhook side, then finish on the overhook side. Here's a variation of a finish that you can actually finish from the underhook side.
I learned this from my training partner Dylan Cameron. Not sure who he learned it from or if he's hit it in a match, but we've both hit it in live rolling
