As a pastry chef from Sweden, I did not expect my Sunday evening being a rollercoaster from curiosity to anxiety to feeling overwhelmingly impressed in fifteen minutes. I would never ever put sugar paste on a Princess Cake - marzipan works just as well for modelling the rose - but other than that: great job guys!
@martah5369

Yes you would never fight over the rose if it was fondant 🤢
@hildigunnurr

and that wasn't even the normies fault since they got the fondant to use from the chefs!
@GrebbChannel

Also, the chefs told them to have 3 layers of sponge. And if you do so, you do sponge - jam - sponge - custard - sponge - cream - marzipan.
@FrejaInWonderland
@FrejaInWonderland 4 года назад
GrebbChannel no, the order is actually correct. The sponge on top is to make it easier to cover the dome of cream in the marzipan. Usually the sponge layers are the same thickness though. And you take the top layer, baked side up - jam - bottom layer, baked side down - custard - cream - the middle layer (so you can't see the baked edge near the marzipan) - "crumb coat" of marzipan - marzipan. Thanks to putting the baked/caramelised edges closer to the jam, it gets the impression of not being baked at all. I forgot to flip the sponge on the day's production a couple of weeks back, and there were several customers who asked if I had burned the cake. ^^'
@GrebbChannel

@@FrejaInWonderland I've never made(professionally) or bought one with sponge above the cream. I guess there's no right or wrong way, since princess cake originally don't have raspberry jam either.

As a swede that has made probably around 100 princess cakes in my life, I approve. I'm proud of the boys!. I mean they did everything slightly wrong, but they got there in the end, and I bet they tasted great! I have seen waaay worse looking home baked princess cakes in my days. Also, although I see myself as very experienced at making princess cake, I have NEVER made my own marzipan! I buy the marzipan ready made and already green, and just roll that out, so I am impressed that they did that. I mean it didn't look professional, and the shade of green is all wrong, but impressive nevertheless 👍 All stores in sweden carry all the parts for this cake, so you can just slap it together. The cake, already cut into three layers. Instant custard cream, and pre-rolled green marzipan that you just take out of the package and drape over the cake. That is the most common way for people to make this cake in sweden I think. Also, you can buy the cake finished and decorated in all stores, and also as separate slices. They are EVERYWHERE. That is how common this cake is here. It is kind of crazy, and also a little bit boring sometimes.
@ColeCorvin
@ColeCorvin 4 года назад
And the obsession is annoying since I don't like marzipan. There are so many other cakes out there. Why did we have to land on this one.
@omgweirdozz

Men det ska väl inte vara en tårtbotten på toppen? Grädden ska väl vara överst så det blir den snygga rounded top formen?

@ei96byod 4 года назад
@@ColeCorvin I know. It's weird. I mean I love it, it's my favourite cake. But even I think it has gone a little too far. It seems like we are obsessed with this cake. And most of the ones you buy in the stores are pretty boring. It's really only if you buy them from a very good baker, or make it yourself you will understand how good it can be. I understand your problem with marzipan. Even other cakes tend to be covered in marzipan. Sweden must be one of the countries that consume the most marzipan 🙂
@tawesssoabbox
@tawesssoabbox 4 года назад
they even try to mix it up by changing the type of jam and the color of the marzipan... You know.. because we swedes love our radical changes... Also woe on the poor store who does any of these changes and still call it princess cake... Many fists will be clenched in pockets...
@ei96byod
@ei96byod 4 года назад

It is one of the hardest traditional Swedish cakes to make, rivalled only by Swartzwald. With that in mind, I am very impressed with the end result. It doesn't look quite like the traditional Swedish one, but I bet it tastes just the same. It is close enough for a home bake by someone who's never worked with marzipan before. And there's a secret Swedish people use: We buy our marzipan pre-made!

Never once have I had a princess cake with the last (top) layer being custard. It's always the whipped cream on top then marzipan over it. - Swedish 28 year old.

@UCl4__J0orm1v_RczHIacrNg So weird to see custard on top of the whipped cream. Especially since hte whipped cream is supposed to be very light, dont evne k now if it can hold the weight.

Nor having a layer of sponge/genoise over the cream. I'm surprised over how upset this actually makes me feel xD

They both win half way--the both of them made half a perfect swedish cake. With their powers combined it'd be a full royal.

Swede here. The original Swedish Princess cake actually doesn't have any jam (only custards and cream), although today pretty much every one puts raspberry jam in them, which technically makes it an Opera Cake here in Sweden (but this version you're making is what 99% of Swedes refer to as a Princess cake).

Personally I preferred Barry's cake but boy, the colouring of the fondant on both of them was very, very green, more sludgy really, but a fabulous effort on both sides. I've never fancied making one but after watching this, feel I could make a good hash of one, but using a "proper" recipe. Way to go both Barry and Jamie, well done, A for effort. 🎂

Hey! What happened to the anti-cheating barrier in the ‘think like a chef’ video? I think it would have helped here!

It's because the challenge is 'recipe-less', not 'think like a chef'. That's why the barrier wasn't there.

As someone who works at a bakery and is often the one to pack and lable all the things before being shipped off to stores, you guys have no idea how many variants of this cake is made and sold each day. We sell the standard cakes in four different sizes, we sell a log version and we sell two slices of the log. And we sell them through your standard neighbourhood grocery store, new delivery every day. So yeah princess cake is like the icon of swedish deserts.
