Sweet and Sour Pork with a Moroccan Twist

Today we are making Sweet & Sour Pork, the beloved, quintessential Chinese dish. If you don't eat pork, this can also be made with chicken or tofu. Besides the regular vinegar, sugar, and pineapple, this version is flavored with a Moroccan spiced twist.

White or Red Onion

Light Soy Sauce
Sesame Oil

Erythritol (or Sugar)
Cornstarch

Oil for frying

Reminds me of how mom and grandma cooked - nothing was really measured, it was all by instinct. More of this, a little of that - knowing by a look or taste whether or not it was right or needed something else. When I see you pull everything together in your own way, it is the art of cooking. Turn your pineapple upside down as it ripens. Sugar that normally nests at the bottom part of the pineapple will distribute and makes it sweeter overall. In Asia where pineapple is cheap and plentiful we often only eat the bottom sweeter part and use the top for flavoring and cooking.

As for the sweet and sour sauce try the Lee Kum Kee Sweet and Sour sauce. You can actually taste the pineapple notes and I think its the best balance of sweet and sour overall, not overly any one thing.

I know what you mean on measurements. My gf doesn't really cook so when she asks me how much of X I put in, I'm usually like "idk, just do it how you like it 🙃"

light bitter components are so important in deep flavoring tho (not saying necessarily in this dish) (I personally prefer green peppers (with layer) for cooking bell peppers or filling them)

It's comforting to see that even a professional cooks much like I do - forgetting ingredients because I didn't pay attention to my prepping. So much fun to watch. Any suggestions for a pepper substitute? I can't eat bell peppers.

(i also don't eat bell peps) cooking peppers or a mild green chile or California pepper can be a good sub if you still want a pepper :) if not, carrots, chayote, zucchini, or other squash are good texture subs. sorry, hope this helps !

If not using bell peppers you can sub cauliflower which comes in green, purple, and white varieties so you can still get down fun colors in there. Cabbage and Brussels sprouts will hold together well too

I understand using artificial sweeteners for health reasons, but myself and others I know have digestive problems with them. Please be aware that it's not uncommon for people to have some very unpleasant experiences from artifical sweeteners, erythritol being one of the primary sweeteners causing digestive discomfort.

if I'm developing a recipe I will be more mindful of the specific measurements. After I have it down to exactly where I want it for repeatable quality I will tend to eyeball it when I am making it just for me. It's always good to know the exact measurements for giving the recipe to others though. Not everyone is good at cooking with feeling though.

@Jon Kung Do you still use the same wok that came with the induction burner? If not, could you share some woks that would work well with this burner? I would go to my local Asian market and get one of the industry standard woks. However, they come with a toxic coating, and I don't have a flame to burn it off. Also, the toxic fumes in my apartment would not be fun.

I have a love and hate relationship with spice blends, ras al hanout is the example here. If I use this and I like it i hate how it's not easy to reproduce the result

We love our sweet & sour pork with a lot more sauce here - to mix into our rice. And knowing how much work goes into making it, we go to nearby food stalls to enjoy or order takeaways - as it's so readily available. By the way how do you recycle the oil used for frying the pork?

I have an oil can where I stir frying oil and I filter it out with frying oil paper. You can easily find both on Amazon

Depends on the pork but the flavors of the sauce are so bold you wouldn’t tell. I would try this with chicken thighs though!
