Sweet Corn & Green Peas Pulao Recipe

Serves 2-3
2 cups basmati rice soaked for 30 mins
1 cup fresh green peas
1 cup sweet corn
Heat pot, add 2 tbsp ghee, 1 tsp cumin seeds, 2 bay leaf, 1 cinnamon stick, 1 black cardamom, 2-3 green elaichi, 4-5 cloves, 4-5 black peppercorns. Saute till they turn aromatic, and then add 1 medium sized onion sliced thinly. Saute & cook till they turn light brown in color. Add 1 tsp ginger garlic paste & 2-3 green chillies slit. You can add more chillies if you wish. Saute till the raw aroma of the gg paste disappears. Now add the green peas & corn kernels. Mix for a minute and then add the basmati rice & 2&1/2 cups water. (Note: ratio is 2:1) Add salt as per taste & 1 tbsp lemon juice. Cover with lid and cook till all of it is cooked & the rice blooms on the top. This will take approximately 10-15 mins. Cook on low-medium flame. Garnish with fresh coriander leaves & serve with boondi raita!
