1/2 cup white sugar (105g)
1/2 cup light brown sugar (120g)
2 Tablespoons lemon juice
1 teaspoon lemon zest
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/8 teaspoon nutmeg
1/8 teaspoon salt
3 cups water
Slurry:
2 Tablespoons cornstarch
2 Tablespoons water
2 9-inch pie crusts
Sugar Sprinkle for the Top
1 Tablespoon white sugar
1 Tablespoon light brown sugar
