As a person of South Asian descent, the amount of anxiety people have around “messing” up food from another culture or being “disrespectful” astounds me. This seems to be a unique result of the internet age and this bizarre guilt has been born, making people hesitate to do anything new for fear of offending people. Just live life and try things.

Exactly, even some people who are of that culture make “inauthentic” versions because of where they live and what ingredients they have access to.

Totally agree. I remember making dinner for my friends family when we were visiting them and his grandma was so worried about offending me because she didn’t care for most of the things I made. Meanwhile our families are just as picky. My dad never touched any food other than South Indian food. No one ever accused him of offending anyone.

"Somehow it always ends up slop." Slop is literally life. 😂 Millennia of humans have been stewing their vegetables to make them safe and digestible so they can survive the winter and feed the people who don't have as many teeth, like babies and grandmas. Slop. Is. Life.

I'm actively making this recipe and it's runny. I covered it while it simmered and I think that's where I went wrong. I'm letting it continue to simmer uncovered, hopefully, it's salvageable. :) It takes great even if it's soupy.
