Nice & colourful, thanks! I make this occasionally. Yes as you said the shrimp get soggy when mixed & kept. Therefore, I heat the sauce a bit & mix them up just before dishing out.

Really good. Prep takes a minute but it’s worth it. Followed the recipe exactly and it turned out great.
