Hola from Mexico, mate! Your interpretation is actually quite close to the tacos árabes you can find over here (minus the cheese, which you usually find melted into the filling). Flavor profile seems pretty much on point, too, and the added touch of finishing the meat on the griddle ("planchados", is what they call them) was quite nice. It's great to know a culinary staple from my country pleases palates all over the world. Keep up the good work, hermano.

@@faederSSF Al pastor is Tacos, Its tacos de pastor or i guess "shepherd style tacos"? Ironically its mostly pork these days not lamb but that goes back to its Arab roots probably.It is just the name of a type of taco "filling". If something is wrapped in a tortilla it is a taco until...its not, in the case of enchiladas, quesadillas, sincronizadas etc etc etc. Its kinda like Doner meat isn't kabab but it also is "kebab" meat.Make sense? Probably not.

@@faederSSF the pastor is made with orange juice, vinegar, guajillo and ancho chili, garlic, onion, cloves, oregano, cumin and achiote most of the times. (each taqueria have their own recipe) and of course a slice of pineapple.

Say Oh Yeah you already got a great reply from @miclo58 in terms of the spices and ingredients, but I would also add that tacos árabes can often be found served in pita bread, whereas tacos al pastor (AKA de pastor, de trompo, de adobada) use the smaller, thinner corn tortilla often called “tortilla taquera”. In fact these tacos are usually served “con copia” (“with copy”), which means a double tortilla.

brumsgrub yes, Marnus is a top player, hoping he dominates the cricket scene in all formats. Warner gets killed by your bowlers every time we play over there. I’m not sure what the aussie selectors see in him, i’d only select him in a series played in Australia.

tacos árabes ( somewhat uncommon but found in Mexico ) were always my favorites when i lived there. Good share!

@@jameshobbs Ah yes, cant speak for the South. Yucateca food is amazing but even thats not easy to come buy down there from my experience. I guess its geared towards tourism now. Some of my favourite Mexican platos are from there! Cochinita pibil, sopa de lima, pok chuck mmm lovely.

Great video. Pretty sure the essence you're missing is a few cloves in the marinade. Sounds weird but mixed with citrus it gives it this pastor taste. "He who controls the spice, controls the universe"

I think it's a little bit like real Naples pizza. You wonder how they can taste so good with so few simple ingredients until you find out about all the stuff in the sauce and the prep it takes and you go Whoa!! That's how they do it!!

Hi nice twist and another twist by using pork instead of lamb. Why did you use the tortilla press for your wheat flour tortillas as they can be simply rolled out using a rolling pin, the tortilla press is used to make tortillas when using Masa Harina, which is gluten free and has to be pressed as it will break up if you try to roll it?

It's not Taco Dough!!!! It is Tortilla dough!!!!!! Also real Mexicans would use lard not olive oil... Thanks for this Vid I am going to go out and try to find that Taco Truck tomorrow. Technically speaking cooked pork that is crisped on the grill is Carnitas and no longer a Kabob...ALSO I NEED A KEBAB MACHINE IN MY LIFE!!!!!!!!!!

Hi John can you specify the quantity of yeast in the dough recipe... because you said the warm water will acitvate the yeast at 7:45, but there was no yeast put in the dough mixture

In Sweden we have "pizza" called "Kebab Pizza", and if that wasn't enough, they top it with "white sauce". No, it's not bechamelle. It's ugly and a horror to behold, but with your kebab meat it might be quite an experience. Want to come over and make a Kebab Pizza worthy of it's name? We need proper kebab, and we need proper kebab pizza. And please don't get me started on Swedish "Pizza Salad"...

Quality product, John. MAYBE £4 in a posher part of London, but 2 for £5 is more realistic if you are doing this on any kind of scale. You are only putting in about 70g of meat and avocados are probably pretty expensive in the UK. Most people cooking authentically are using lard in the tortillas instead of oil as it gives the tortilla more "separability" when you take a bite, rather than the chewiness of a pita in a shawarma. Did you buy the trompo or rent/borrow it? It would be nice to see more videos utilizing that fine tool for souvlaki, gyros, shawarma, tacos al pastore, and a variety of Turkish delectibles. Love the work you do!

Sorry - but this one isn’t smashed in my opinion! It just didn’t hit the authenticity bells. First careful with oregano: Mexican oregano are totally different than Mediterranean(which you can buy only in Europe). The marinade was different - but especially the salsa was everything but Mexican (despite the chipotles). Oh also the tortillas were not authentic (you can even not use properly a tortilla press for authentic flour tortilla - they are rolled out). It seemed more like a Gyros on a flatbread....

That's latino culture for ya! ;) Some secrets need to be kept, but just a few. And your "Al pastor" looks awesome but mexicans use sour orange, so yours might be a tad more tangy. So glad to have you back! :D

Couple of tips here from an experienced Döner maker: You should definitely put animal fat (in your case the fat you previously trimmed) as the uppermost layer. This bastes the meat with fat as it melts and prevents drying up on the upper layers. Trimming your Döner with a very sharp knife before you wrap it is also a good idea - so that it cooks evenly and you can cut prettier more evenly-sized pieces. Otherwise, good job mate!

Awesome to see you tackling a new cuisine! Just a couple of observations. First, run with those prices while you can get away with it. North Americans would expect two or three tacos for five quid! Second, since we know you have Netflix, go check out Taco Chronicles and watch the first episode that is all about Pastor, as it’s similar to what you made a go at. Great show! Cheers!

Hey nice vid! I´m from Puebla and that it´s a great approach to a real taco arabe! Look really yummy and with great flavor. A small detail, here in Puebla the original taco has no avocado, that´s for the also epic food called "Cemita". Greetings

99% of the time I think your channel is fantastic This one just felt tone deaf. Something cultural just didn't feel right. I've had this style of tacos And there are fantastic. I wish I could put my finger exactly on what it was so I could give some more constructive criticism but I'm definitely not going to share this video.

my friend used to own a restaurant in LA, he told me that food trucks and food carts had a bad habit of parking in front of his store and undercutting him, the cops wouldnt do jack. he had 500 million rules and regs to follow while the unlicensed illegal vendors were free to do as they please. basically in California, the more taxes you pay the harder the government comes down on you. years of democrat rule has made it impossible to do business in California

Lard or bacon fat in your tortilla mix in place of olive oil as your fat. You will instantly notice the difference. Other than that they looked amazing.
